Kale and Italian Sausage Pizza with Einkorn Crust
Friday night pizza and movie night is a long-standing tradition we stick with each week. It’s comforting, delicious, and fun! We’re always trying new topping combos, but this kale and sausage pizza combo is one we keep coming back to.
You may be thinking, kale on pizza? But trust me, it’s delicious!
Especially when you pair it with Italian sausage. Add a little cheese and a yummy einkorn pizza crust and you are SET!
Want to round out the meal with more veggies? Add a simple salad + my kefir ranch dressing. And keep extra ranch on hand if you love dipping your pizza in ranch too!

Crowd favorite – You may not think that a sausage and kale mixture would be such a good combination, but it sure is! The earthy kale pairs well with the savory sausage. My recipe testers (AKA – kids of many ages) always love this one!
Minimal ingredients – Including the pizza dough, all you need are 5 simple ingredients, making this a good recipe for the budget!
Customizable – Of course, more ingredients can be added to adjust to your liking – try using spicy Italian sausage or adding red pepper flakes for some heat, add a sprinkle of parmesan cheese or pine nuts for some crunch, a minced garlic clove or two on, some fennel seeds, or sliced bell peppers. The point here is that you can customize it with extra additions to use what you have on hand!

- einkorn pizza dough, or storebought
- pizza sauce or homemade tomato paste pizza sauce
- mozzarella cheese
- cooked Italian sausage
- kale
How to make kale and sausage pizza with einkorn crust
Step 1: Preheat oven to 450 degrees F. Place a baking sheet or pizza stone in the oven to heat up. If your dough has been refrigerated, bring it to room temperature for 1 hour. If your sausage is not already cooked, cook it in a large skillet over medium heat breaking it up into smaller pieces with a wooden spoon as it cooks. Remove the sausage from the pan with a slotted spoon or place it on a paper towel-lined plate to remove excess grease.
Step 2: After 1 hour, roll half of the dough ball out into a 10″ circle on parchment paper or a lightly floured surface using a rolling pin. Roll out the other half as well.
Step 3: To make the pizzas, spread the tomato sauce on the rolled-out dough. Next, add ¼ cup mozzarella to each pizza base. Next, sprinkle the small pieces of cooked sausage on, then the chopped kale, and lastly divide the remaining cheese on top of the pizza.
Step 4: Bake (on parchment paper) in the preheated oven for 10-12 minutes, or until the dough is cooked through, your cheese melts and the edges are golden brown.

How to store
Leftover pizza should be stored once cooled to room temperature in an airtight container or plastic wrap.
Reheat in a hot oven or air fryer for 3-4 minutes until the cheese melts and is warmed through.

- 1.5 cups shredded mozzarella, (divided)
- 8 oz mild italian sausage, cooked
- 2 cups kale, finely chopped
