Weekends sure are the best huh?
This last one was exceptionally spectacular. We had no plans, but I felt like we did so much.
Friday evening we made a trip to Babies R Us… our first of many I am sure.
After that we met some friends for happy hour at Lapellah, a semi-new restaurant in Vancouver. Happy hour didn’t start till 9pm so we were out late (for me!).
Saturday was a day filled with grocery shopping early in the morning, which, I might add is a great time to shop. Everything is freshly stocked and organized and there aren’t many people. Score.
Then we walked to a coffee shop near our house and strolled around the neighborhood for an hour looking at old houses + talking about the future.
I had lunch and a nap. Oh it was a good nap. For a full hour!
We ran more errands, stopped for a slice of pizza…
then had a sushi making party at our house.
First time making sushi and I loved it. Even my nephew loved it!
Sunday I bundled up for a 30 minute run. It was 31 degrees out when I left, so I bundled up good. After a mile the neck gator came off, but 3 layers on top was just perfect.
I lazed around the house a bit then met a couple friends at the theater to watch Breaking Dawn. I thought it was a little slow in the beginning, but still really really good. 🙂
Then for dinner we made sushi again! It was so easy too, everything was still prepped from the night before.
Normally I like super productive Sundays and to feel like I’ve accomplished something over the weekend, but this one was just about doing stuff, with not much planned. Just spending time with Jacob, friends and family. I need to do that more often!
How was your weekend? Anything you’d like to highlight?
Blogger Spotlight
I read a lot of blogs every day… I’m kinda addicted. It’s just so much fun to read about other people’s lives, see their creativity and get ideas. I’ve decided to start a blogger spotlight to share some of my favorite blogs. I bet some you have read before, but maybe some will be new.
I’ll feature one, maybe two bloggers each time. Just spreading some blog love!
Prevention RD
I started reading Nicole’s blog shortly after I began mine 2 years ago. She actually started blogging back in June of 2009. We’ve guest posted for each other before, and both have cute dogs. She’s married and is a registered dietician, plus a teacher! That girl is always so busy I can’t even keep up.
Nicole is kinda my go to gal for recipes. She makes a lot of them, and shares so many! One of my favorite things she does is grading her recipes (guess you always wanted to be a teacher!). On her recipe page you can find them categorize by type with a grade next to them. I totally pay attention to those grades and haven’t been let down yet!
Recently I made her crockpot chicken tortilla soup and french dip to go with my pumpkin garlic roll trial. Both were A+’s Nicole! Not that I expect any less. 🙂
I hope you’ll take a minute to stop by Nicole’s site, Prevention RD. To get started, here are three of her favorite posts she’d like to share with you. Don’t miss em!
1. Orange Glazed Blueberry Doughnuts…they’re just so, so good…and
only 98 calories each!2. My post called “Imperfections” – it was the first time I very
openly talked about my weight struggles and how challenging I find
balancing life. Of course, I’m still trying to find that balance and
still struggle…but I feel better having been so honest and open. And
everyone was SO supportive.3. Slow Cooked Pork Carnitas Tacos. I don’t know that I’ve ever had
better flavor in a taco and being the Mexican food-lover that I am,
this post will always stick out as a favorite! Plus it’s so simple to
make and I’ve found great success with slow cooking a pork tenderloin
vs. a pork shoulder to cut lots of calories and fat!
Have a wonderful Monday! And get ready for tomorrow. I am over the moon excited to share my new, perfect and AMAZING recipe for individual chocolate mug cakes. They’ve got the hubs begging for them and you will be too!

Nicole does have some good lookin’ recipes. Know what else looks good? That piece of pizza. I could totally go for that about now.
It was as good as it looks 🙂
