Sometimes you’ve just gotta make due with what you’ve got.

Obviously it wasn’t.

Breakfast came around and I wanted oats, but not just any oats — it must be my beloved custard oats.

I got to thinking about a comment Anna @ Food Fitness Frolicking left on my double custard oats recipe recently. She asked if you could make it in the microwave. I wasn’t sure how it would turn out but told her to try and let me know.

So when my stove-less morning came around I knew it was time to experiment. For me to experiment!

And I’m soooo glad to tell you it worked! I’m no pro at microwave oats, and because I was afraid they’d explode I kept the setting below 100% the entire time. No exploding oats happened!

Did I still end up with super creamy custard oats? Yes Yes Yes!

Should you give this method a try? Yes, if you aren’t a fan of stovetop oats. I do have to say I prefer my stovetop oats more, but these were almost as good. Almost. 🙂

Microwave Double Cocoa Banana Custard Oats
serves 1

Ingredients

  • 1/2 cup rolled oats
  • 1.5 cups liquid (I just used water)
  • 1 egg
  • 1 small banana, sliced
  • 2 tbsp cocoa powder
  • pinch of sea salt
  • toppings: cacao nibs and peanut butter

Directions

  1. In a tall microwave safe bowl whisk together all the ingredients (half the banana), except toppings. Microwave at 70% power for 7-8 minutes, stopping to stir every 1 minute.
  2. When your oats are done they should be super creamy and thick. That means your egg is cooked all the way too! Top with cacao nibs, the remaining banana and peanut butter. Stir and enjoy!

I’ve actually enjoyed this 2 mornings in a row.

    I too get afraid of microwave explosions, but have grown to overcome them after being forced with a only a microwave for a week. I too prefer stove top, yet they are a close second! 🙂
