Hello and happy Monday! Here we are at another food and fitness look for last week. Before I share, here are some snaps from our weekend.
We toured the family birth center (we’re at a different hospital this time) and got all registered. 4 weeks to go!
Family walk + a little beach exploration. Clearly Hunter LOVES sticks.
Successful soft wheat sandwich bread was made. Recipe coming soon!

It was a wonderful weekend filled with just a touch of productivity (bread baking + I shampooed the carpets downstairs) and lots of relaxing and family fun. We’ve been soaking in our time as a family of three these past few weekends, which has been glorious and just what we all need.
Now let me share what we feasted on last week!
Monday – twice baked sweet and regular potatoes + orange slices
Tuesday – thai zucchini meatballs over whole wheat egg noodles + sauted cabbage
Wednesday – leftovers?? I actually can’t remember cooking anything…
Thursday – cheddar broccoli omelets + whole wheat skillet foccocia + orange slices
Friday – whole wheat spaghetti with meat sauce + roasted green beans
Saturday – BBQ cheddar chickpea burgers on homemade buns + salad… and yummy cupcakes my SIL made
Sunday – crockpot hawaiian teriyaki beef over rice with steamed cabbage and broccoli
For fitness I finally fit some more walking in! Here’s a look at last week.
Monday – body pump + fitness yoga
Tuesday – lots of body combat practice
Wednesday – body combat (pictured above teaching as batgirl)+ slow walk with Hunter + playing at the park
Thursday – body pump + sculpt and tone
Friday – body pump + fitness yoga
Saturday – rest… (does shampooing the carpet count?)
Sunday – family walk
With it being MLK day one of my classes was canceled for today, so I’m enjoying the extra bit of rest. Soon, a little bit of dinner prep while Hunter’s still napping. I’m thinking quiche tonight (since I forgot to start the crockpot this morning for a different meal) + making an extra one for the freezer. Better get to it before Hunter wakes!
