The banana adds so much though – I highly recommend keeping it! The mashed banana creates naturally sweet, tender pancakes while the blueberries add pops of fresh fruit without overpowering the banana flavor.

Natural peanut butter – Almond butter, cashew butter, or sunflower seed butter all work well if you need a peanut-free option.

Unsweetened almond milk – Any milk will work here, including dairy milk, oat milk, soy milk, or coconut milk.

Coconut flour – Coconut flour cannot be substituted 1:1 with almond flour or all-purpose flour because it absorbs much more liquid. If using another flour, you’ll need a different recipe formulated for that flour.
