Baked Chicken Tacos with Green Avocado Dip
Taco night is my absolute faaaaaavorite night! If you're into it too, this recipe is about to make it even easier.
Instead of cooking each tortilla one at a time, you layer seasoned ground chicken and melty cheddar into street corn tortillas, fold them, and let the oven do the work!
They come out golden brown and crispy on the outside with that gooey, cheesy filling everyone loves.
The green avocado dip is the best part - it's bright, creamy, a little spicy, and gets a protein boost from cottage cheese (we love that!).
Fun enough for a Taco Tuesday, easy enough for a busy weeknight. Hope you love this one as much as we do!

Why you'll love this
Crispy without frying - The tortillas bake up golden and crunchy on a sheet pan with just a light spritz of oil.
Feeds a crowd - You get 24 little tacos at once, so the whole family eats at the same time instead of in shifts.
Protein-packed - Ground chicken and cheddar make a simple, flavorful filling that's high in protein. Each serving has 27 grams of protein!
Weeknight friendly - With just a few ingredients and minimal prep, this is an easy dinner for busy nights.

Ingredients
For the crispy chicken tacos:
- Street corn tortillas - The small size makes them perfect for crispy tacos, and corn tortillas get extra crunchy in the oven.
- Ground chicken - A lean, mild protein that soaks up the taco seasoning.
- Taco seasoning - Use your favorite store-bought blend or a homemade taco seasoning mix
- Shredded cheddar cheese - Acts as the glue that holds everything together and gives you those cheesy tacos.
- Spray oil - Avocado oil or olive oil spray both work well for crisping the tortillas.
For the green avocado dip:
- Avocado - Makes the dip rich and creamy.
- Cottage cheese - Adds protein and a tangy creaminess without needing sour cream.
- Cilantro - A whole bunch for fresh, bright flavor.
- Jalapeño - Brings the heat. Remove the seeds for a milder dip.
- Salsa verde - Adds tangy tomatillo flavor and a little kick.
- Lime juice and sea salt - Brighten and balance everything.
How to make
- Start by cooking the ground chicken in a skillet over medium heat for about 6 to 8 minutes, breaking it into small pieces as it browns. Once it's fully cooked, stir in the taco seasoning so every bite of the chicken filling is coated.

- While the chicken cooks, preheat the oven to 425 degrees F. Line three baking sheets with parchment paper, give them a quick spray of oil, and lay out eight tortillas on each sheet.
- Now it's time to build. On one half of each tortilla, sprinkle some cheese, add a spoonful of the chicken mixture, then top with a little more cheese. Cheese on both sides of the chicken helps the tacos stick together once they're folded.

- Bake the open tortillas for about 5 minutes to soften them and start melting the cheese. Pull the pans out, fold each tortilla in half over the filling, and press down gently. Give the tops a light spritz of oil if you'd like them extra crispy. Bake another 5 minutes, flip the tacos, and bake 2 to 4 more minutes until they're golden brown and crispy.

- While the tacos finish, make the avocado dip. Add the avocado, cottage cheese, cilantro, jalapeño, salsa verde, lime juice, and a pinch of sea salt to a blender with a little water, and blend until smooth. Serve the tacos warm with the dip on the side.

Recipe tips
- Bake briefly before folding. Corn tortillas can crack if you fold them cold. That first short bake softens them so they fold easily.
- Don't overfill. A little filling goes a long way with street-size tortillas, and overfilled tacos tend to fall apart.
- Watch the last few minutes. Ovens vary, so check the tacos during the final bake. You want them golden brown, not burnt.
- Adjust the dip thickness. Start with 1/4 cup of water and add more a splash at a time until it's as thick or thin as you like.
- Use a wire rack for extra crunch. If you have leftovers to reheat, placing the tacos on a wire rack helps air circulate so the bottoms stay crispy.

Serving suggestions
These crispy baked chicken tacos are great on their own with the green avocado dip, but you can easily turn them into a full taco night spread!
Serve them with a side of black beans or refried beans, a scoop of Mexican rice, or a simple salad.
Set out your favorite taco toppings like pico de gallo, shredded lettuce, diced white onion, hot sauce, or a dollop of Greek yogurt so everyone can make their own tacos just the way they like them.

Meal prep & storage
- To store: Keep leftover tacos in an airtight container in the fridge for up to 4-5 days. Store the avocado dip separately in a small airtight container with plastic wrap pressed right onto the surface to help keep it from browning. It's best within 1 to 2 days.
- To reheat: Reheat tacos in the oven or air fryer until warmed through and crispy again. The microwave works in a pinch, but the tortillas will soften.
- To meal prep: Cook the chicken filling ahead of time and keep it in the fridge. When you're ready to eat, assemble and bake the tacos fresh for the best texture.

Substitutions, optional variations & dietary adjustments
Below you'll find a list of substitutions that will work well in this baked chicken tacos recipe.
Ground chicken - Swap the ground chicken for ground turkey, shredded chicken from a rotisserie chicken, or leftover chicken. Toss it with the taco seasoning and a splash of water or enchilada sauce.
Tortillas - Small flour tortillas work too. They'll be a little softer and chewier than corn.
Different cheese - Try Monterey Jack, pepper jack, or a Mexican blend instead of cheddar.
Add-ins - Stir black beans, diced green chiles, or chopped bell pepper into the chicken filling for more flavor and fiber.
Make it milder - Remove the jalapeño seeds or leave the jalapeño out of the dip entirely.
Cottage cheese - Plain Greek yogurt or sour cream can be used in the dip instead of cottage cheese.
Gluten-free - Corn tortillas are naturally gluten-free, just double-check your taco seasoning and salsa verde labels.

FAQ
The first short bake is the key. It warms and softens the tortillas so they fold easily without breaking.
Yes. Work in batches, place the folded tacos in a single layer, and air fry at around 400 degrees F for a few minutes per side until crispy. Keep an eye on them since air fryers vary.
Absolutely. Shred the chicken into small pieces and mix it with the taco seasoning before filling the tortillas.
You can fill store-bought hard taco shells and bake them in a baking dish, but you'll lose the folded, melty, crispy texture that makes these so good.
Yes, but it's best the same day. Store it in an airtight container with plastic wrap pressed onto the surface and a little extra lime juice to help keep it green.
