Free concert? Yes!
Free food? I’ll take it!
Free beer? Who can say no?
As Jacob and I live on our self induced strict budget we’ve really been enjoying free entertainment. Really.
Last night we headed to By the Bottle (a local store downtown that sells beer by the bottle and has a tap room that showcases beer from mostly Washington, Oregon and California). They were having a ‘Meet the Brewer’ night, so we got to sample 4 beers from a Seattle brewery. Not only was that rad, but Jacob had a great time talking with the brewer and learning more about brewing beer.
Right after that we walked down a couple blocks to the park and watched a concert in the park. We met my parents there and got treated to dinner. There were a bunch of food vendors to choose from and I was pleasantly surprised to find a crepe truck. The chicken + veggie was packed to the brim! I talked with the owner and he shared if you want to start a food truck business, you can with searching “food trucks for sale near me“.
Free nights can be pretty fun, huh?
In other news, I have a slight obsession going on.
This week marks my first tuna obsession. Such a simple and standard food. Where did this obsession come from?
Who knows, but I’ve been fulfilling it.
Of course with normal tuna sandwiches…
Tuna + mayo + lemon pepper + spinach + whole wheat hot dog bun
There is something about the combo of tuna + mayo that’s just comforting. Normally I’m not a big mayo fan but with tuna it’s a-okay in my book.
I’ve had that a few times this week. But then I kicked it up a notch. In a big way.
You see, I couldn’t just serve tuna sandwiches for dinner the other night. It had to be different. Not sure Jacob would be very impressed with a hoagie and tuna salad.
But this… yeah he was impressed and so was I.
Good old fashion tuna melts. But better.
These mayo-less tuna melts were addictive!
We enjoyed them on crunchy, toasted wheat english muffin bread.
The last of the home brewed citra IPA finished off. I enjoyed a bit while cooking too.
Tuna/Avocado Melts
Serves 2-3Ingredients
- 2 cans of tuna, drained
- 1 avocado
- 1 tbsp lemon juice
- 1/2 tsp lemon pepper
- 8 small slices of english muffin bread
- 8 small slices of sharp cheddar
Directions
- Preheat your oven to broil. Place the 8 slices of bread on a baking sheet.
- Prepare tuna mixture by mixing together tuna, avocado, lemon juice and lemon pepper. Spread evenly on each bread slice. Top with a piece of cheddar.
- Broil for 5 minutes, or until your cheese is nice and melted and your bread is toasted.
- Serve with a green salad.
This was simple cooking at its finest. Normally I stay away from dairy, but the cheddar was necessary here. The sharper the better.

Tuna + mayo is so amazing! YUM and I love cheddar melts as well!! I never thought to try tuna in a hot dog bun, that is a good idea!
Haha yeah the idea came out because that was all I had on hand!
I so wish I liked tuna…I’ve just never been able to get over the smell….any who. YES, free stuff totally rocks. Brings out the college kid in us all 😉 Happy Friday

I go through phases with tuna. I like it mostly as a sandwich with a little caesar dressing (instead of mayo, I guess…) and spinach on top.
There’s always at least one or two cans hanging around for when a new phase starts to kick in!
I’ve never tried it with caesar dressing but it sounds really good!
I LOVE tuna. I would eat it by the canful if I could… and had that much money 😉
