Hello Get Healthy With Heather readers! I’m Erika and I’m from The Teenage Taste blog. As the name implies I am a 15-year old girl who loves food; usually healthy and sometimes not!

When Heather contacted me regarding a guest post for her blog I was super excited to be able to guest post for her considering she guest posted for me on very short notice back in August. It would only be fair to return the favor, plus I had the perfect recipe to share! It’s a healthier, more nutritious version of a traditional coffee cake, plus it just screams Autumn! 🙂

Apple Cinnamon Coffee Cake

Adapted from Martha Stewart

Ingredients:

  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon allspice
  • ½ cup applesauce
  • 1 cup all-purpose flour, plus more for the pan
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ cup granulated sugar, plus 1/3 cup for topping
  • 2 eggs
  • 1 cup plain Greek yogurt
  • 2 cups chopped apples (about 2 medium apples)

Directions:

  • Preheat the oven to 350 degrees Fahrenheit. In a small bowl combine 1/3 cup sugar, cinnamon, allspice, and vanilla; set aside.
  • Butter and flour a 9-inch round pan; set aside. In a medium bowl, whisk together flours, baking powder, baking soda, and salt; set aside.
  • In a small bowl, beat together applesauce, remaining sugar, and eggs until smooth. Add the flour mixture alternating with the yogurt, beginning and ending with the flour mixture. Stir in chopped apples.
  • Spread half of the batter into the prepared baking pan, and sprinkle with half of the topping. Repeat with remaining batter and topping.
  • Bake until a cake tester inserted in the center comes out clean, 25 to 30 minutes. Cool for 15 minutes, then remove sides of pan and place on a wire rack to cool completely. Serve topping side up.

Yield: 8-10 servings

Seems easy enough, right? This coffee cake would be the perfect breakfast, snack, or dessert on a cold Autumn day. I recommend enjoying it with a piping hot cup of coffee. I mean, it is coffee cake, after all! 😉
