breakfast for dinner

by Heather Englund

Good morning! Things are starting to settle into a great routine over here with our little man. I’m excited to share more about how it’s going in a few days… gotta make sure it sticks first though.

It’s a very special day today… Jacob’s first father’s day. Definitely an exciting day to celebrate with a crepe filled breakfast which I am off to make. I hope you enjoy today’s guest post from Lauren as much as I did. BFD rocks.

Hi everyone!

My name is Lauren and I blog over at Say What You Need to Say from all things food, fashion, health, and just plain living. I am so grateful that Heather asked me to share some of my words as she is settling into her new role as a mom.

When I was thinking of what I wanted to share with all of her wonderful readers, I decided it should be something that I was extremely passionate about so that you could get a small sense of what I am all about. Well my friends, that resulted in me talking to you all about breakfast.

It’s true; breakfast is a passion of mine. I love everything about this meal, so much that once a week, I’ve established a traditional BFD (Breakfast for Dinner) theme night. My husband and I began this routine a few years ago and we’ve stuck to it ever since. Usually on Wednesday’s, we’ll plan to enjoy our BFD and truly look forward to this all week.

When I first started making BFD, I realized I still craved a more savory dinner so I began to get creative with eggs. Not only are eggs fast, cheap and delicious, but they are also a great way to include protein into your weekly menu without having to buy or digest meat every night.

So how can you get creative with eggs you ask? Well there are definitely many ways to incorporate aside from your average scramble. Here are just a few of my favorite ways I choose to eat eggs for dinner.

Sun Dried Tomato and Spinach Frittata

Egg Sammies

Broccoli and Feta Quiche

Scrambled Egg topped Salads

The possibilities are endless. I encourage you all to give BFD a try and start thinking outside of the cereal box.

Thanks everyone!

Breakfast is my favorite meal as well, so many fun things you can do, I remember when it was my least favorite, until I started eating healthy, now I could eat oatmeal, eggs, smoothies…etc all day! I’ve been in a major omelet kick lately as well, I think it’s time to explore a little more with those eggs!
