Feels like Monday doesn’t it? Sure does to me! Knowing there’s one less day to the continued Christmas celebration this weekend makes me very happy.

Tonight starts my busy week of teaching ahead ~ 2 cycle classes, 2 pump it classes and 1 body pump class. Should be tons of fun!

When I originally planned the 7 healthy salads to end the year with I figured I’d get them all shared before the year ended. Looking forward now they may be salads to end AND start the year with. No point in rushing through them right?

Today’s salad is a classic, with a little Heather twist ~ the cobb salad.

What makes this unique is swapping out the traditional blue cheese + blue cheese dressing with a healthier (and tastier!) alternative ~ feta dressing.

I go through phased with blue cheese and I guess when I was grocery shopping I was on my out phase. It’ll come back. šŸ™‚

The dressing is made similar to my creamy Caesar yogurt dressing (the first salad in this series), but instead of parmesan I used feta. Easy peasy swap.

Cobb Salad with Tangy Feta Dressing
Serves 4

Ingredients

  • 2 heads of romaine lettuce, chopped
  • 4 eggs
  • 8 ounces cooked chicken (boiled, roasted, grilled… however you like it)
  • 2 tomatoes, diced
  • 1 large or 2 small avocados, diced
  • 3/4 cup green onion, chopped
  • 1/2 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 ounce feta, crumbled
  • sea salt and pepper to taste
  • Optional additions: crumbled bacon, cucumber, mushrooms, spinach, blue cheese or any chunked cheese

Directions

  1. Begin by placing the eggs in a pot, covered with cool water. Place on the stove and turn to high heat. Once it comes up to a boil, cover and turn the heat off. Allow to sit covered for 15 minutes, then peel + dice for salad.
  2. Divide the lettuce, egg, chicken, tomatoes, green onion and avocado among 4 bowls.
  3. Mix together with dressing ingredients: yogurt, lemon juice, Worcestershire sauce, olive oil, garlic, feta, sea salt and pepper. Dollop on top of the salads!

    This salad looks yummy! I love yogurt dressing, I no longer buy or use sour cream! I have been on such a salad kick! I love them! I tend to eat them more in the summer, due to fresh produce,but with all the holiday sugars my body is actually craving fruits and vegetables. Yah!! Haven’t had any sugar in two days, thats a big step, since December has been a disastrous sugar month for me! I’m glad your posting salads! I’ll be posting one tomorrow. Have a great day!
