Cranberry Maple Baked Beans
These baked beans were delicious and super simple. The sweetness from the maple and molasses makes them super comforting. You can eat them with skillet crisped tortillas, wrapped up in collard leaves or by the spoonful. However you eat them you’ll be a happy camper.
Cranberry Maple Baked Beans
Serves 4 as a main or 6 as a side
Ingredients
- 3 cans beans, drained and rinsed
- 1 large sweet onion, diced
- 3 tbsp blackstrap molasses
- 3 tbsp maple syrup
- 2 tbsp Worcestershire sauce
- 2 tbsp apple cider vinegar
- 1 – 14 oz. can of diced tomatoes (not drained)
- 1 tsp sea salt
- 1/2 cup dried cranberries
Directions
- Place all ingredients in a crockpot and cook on high for 3 hours (or low for 7-8 hours). You will have to stir a few times to prevent burning.
- Prior to serving removed 1 1/2 cups of the mixture (more tomato than beans) and blend until smooth. Add back into the baked beans and stir to combine. This creates a thick sauce.
I boiled a few collard leaves and wrapped beans up in there. It was messy but might tasty!
We also had left over corn tortillas so they got crisped up in a skillet and turned into baked bean dippers.

Looks delish! I subscribe to the herbal tea method to offset my late night snacking. It usually works unless I have an intense craving for something.
Herbal tea usually works really well for me too… I just need to remember to drink it!
Oh my goodness those beans look so good! Definitely will have to try these sometime soon. My husband likes to take his baked beans and mix in dijon mustard. I think it’s disgusting but he loves it. 🙂

oh heavens….I heart beans and especially BAKED Beans!!!! They own my heart and remind me of childhood 🙂 I can’t stop eating at night. Ugh, tea doesn’t cut it for me, so I stay with popcorn, light and fluffy! hehe
