Why do Sundays have to end?  Yesterday was amazing.  I finally ran in who knows how long and ate a fruit or veggie or even both at every meal.  Dark chocolate and a sip of Jacob’s new red ale did pass my lips.  I still felt great though, so that’s a win.

I always find weekends to be my more lax times.  During the work week I’ve got a routine going and not as much leeway.  It’s much easier to sick with rules during the week. 

After 3 hours of finishing up some stuff for school early in the morning, Joe and I were off for a run.  The run I had planned to do Saturday which didn’t end up happening. 

It was the nicest day we’ve had in a long time.  Warm enough to run in shorts and a tank top. 

5 miles in 50 minute.  Sounds good to me.  I tend to run slower miles with Joe since he’s constantly stopping.  Gives me a nice break though.

I forget how much I love running.  Once I get out of the groove it’s hard to get back into it.  I hope those 5 miles get me back on track with running.

Ever since kicking meat for 9 weeks I’ve actually been eating vegetarian fare more often.  Lunch was just that.  Simply delicious and refreshing on a warm summer spring day.

Crunchy Apple, Tempeh and Pepper Jack Salad

I toasted the tempeh and kale in a skillet to get nice and warm + a little crunchy.

Then plated it up.

In The Mix

3 cups spinach
1 serving tempeh, skillet toasted for 10 minutes
2 kale leaves, chopped and skillet toasted for 10 minutes
1 ounce pepper jack cheese, cubed
1/2 apple, chopped
1/4 cup green onion

Simple Dressing

2 tbsp balsamic vinegar
2 tbsp whole grain mustard

I’ve been on a bit of a vinegar kick lately with my dressing.  The balsamic vinegar paired with a vinegar filled mustard worked perfectly for me.  I sure loved every bite.

The salad was kind of a strange combo, but worked together perfectly.  A bunch of random ingredients thrown together made for a filling and tasty lunch.

    Sounds like a great run to me! I have a love hate relationship with Sundays….I just dread the Monday start over! I know I shouldn’t think of it that way ;). Apples are amazing in salads. One of my favorite add ins. Your combo looks great!

      I dread Mondays too. But now it’s evening and I can enjoy it with some surprising sunshine!

    The salad looks great! Lots of delicious flavors + textures. I’ve never tried tempeh before, but I’ll definitely remember to pick some up the next time I go grocery shopping!

      Tempeh is great for a quick salad or sandwich cause you don’t have to do anything to it if you don’t want to.

    I think the spicy cheese and sweet apple sound delicious! And I am yet to try tempeh, but NEED to!! And I am just like you – swamped during the week and I play catch-up all weekend. Unfortunately, I the weekends are never long enough to catch up with everything, though!

      It’s always a constant catch up huh? When you get around to trying tempeh it’s really good if you have time to marinade it. Kind of like tofu that soaks up the flavor but the texture isn’t squishy like tofu.

    that salad looks awesome! i’ve bought tempeh once, but i never really know how to use it properly. it looks intimidating. haha

      Don’t be intimidated Sharelle! Tempeh can be eaten without any preparation, although to me it tastes better after being marinated and sauted in a skillet.
