Happy Monday! Hope you had an awesome weekend.
We had a pretty mellow one. Did a bit of cleaning, had lazy mornings, got the car seat installed, dinner with the in-laws, church and just family hang out time. Who knows, it could have been the last family-of-three weekends! We shall see soon enough. š
Switching it up today and starting with last week’s fitness first.
Monday – body pump and fitness yoga
Tuesday – rest
Wednesday – rest
Thursday – sculpt and tone
Friday – body pump and fitness yoga
Saturday – rest
Sunday – rest
Last week (39 weeks pregnant!) was my final full week of teaching, although it didn’t include 2 of my normal classes. I had a major cold Monday and Tuesday which left me feeling wiped out the rest of the week. Finally just down to some sniffles today.
Things have definitely gotten uncomfortable teaching – lots of pelvic pressure. Thankfully I teach my last body pump class this morning and have plans for pool time later in the week assuming I’m still pregnant. I have loved teaching all the way through this pregnancy, but am definitely looking forward to a few days of relaxation and easier exercise – lots of pool time and walking.
Now a look into what we ate for dinners last week.
Sunday – rice, broccoli and sausage casserole
Monday – whole wheat spaghetti and meatballs
Tuesday – leftovers
Wednesday – peanut butter tofu udon noodles with sautéd cabbage (adapted from this recipe)
Thursday – salmon Caesars salads and homemade crusty bread
Friday – chicken cordon blue, mashed Yukon gold potatoes and roasted asparagus
Saturday – dinner at in-laws
Sunday – lasagna (pictured above) and sautéd zucchini
A little something I was thinking about last night… I tend to only share recipes for the winner foods I make. Want to know a little secret? I make non-winners too. With dinners and baked goods mostly. Take this week, Jacob was not a big fan of our Sunday and Monday dinner. I thought Sunday’s meal was okay and Monday’s was good. I ate both as leftovers throughout the week, even the one I wasn’t a big fan of. Wasting food is the worst!
I made a big batch of granola bars that were also okay. Not bad, but not woah good. Still munching on those too. Things I don’t post because why share a bad or just okay recipe. Just wanted to share that failures do happen in our house! My cooking and baking is no where near perfect. š
Do you have many kitchen failures? Do you still eat them to not waste? Do you think baby girl will arrive tomorrow? Perfectly punctual or fashionably late?
Off to teach my last body pump class. Have a great day!

Cooking with kids in the kitchen should be an Olympic sport!
I definitely have total fails in the kitchen! But I’ve learned to try to make something else out of them. Sometimes they can be saved, sometimes… not š Best wishes to you for a happy and healthy delivery!! Such an exciting time!
AH! I cannot wait to see her! SO so so exciting! I have a feeling shes going to be born on Thursday. That lasagna? Drool. Oh- I totally have fails! Josh always knows its a fail when I say…”if you don’t like it…I have Annie’s macaroni and cheese in the cabinet” hahaha
LOL at least you give Josh another option! I just make Jacob eat it š
