Hello! How was your weekend? We had a very relaxed one with lots of home and family time. Pretty much exactly what we needed after the holiday hubbub. I’m ready to settle down and work on getting some things done around the house before baby girl arrives next month… which includes freezer meals. 🙂
I always love reading other blogger’s food & fitness posts, so I thought I’d share mine. Instead of forecasting our meals for this week, I’m going to share what we had last week… since I’m only half meal planned for these next few days anyways. 😉
Monday – whole wheat pasta in homemade cream of celery soup with ground pork and steamed broccoli (quite delicious combo I came up with using what we had in the house!)
Tuesday – cowboy casserole (none of us were huge fans so I wouldn’t recommend it)
Wednesday – peanut butter udon noodles with kale and tofu (my new favorite go-to vegetarian meal for the week, although I cook my tofu differently that the recipe says – also I used PB instead of tahini)
Thursday – leftovers
Friday – chorizo egg scramble in corn tortillas with cheese + fruit
Saturday – double mushroom burgers on homemade hamburger buns + homemade dill pickles
Sunday – mac n cheese, beef breakfast sausage, fruit and carrots

And a look into my week in fitness… which was a bit lighter because of new years. I am so looking forward to getting back into running after baby’s born – I’ve got the itch!
Monday – body pump + fitness yoga
Tuesday – rest
Wednesday – rest
Thursday – body pump + sculpt and tone
Friday – body pump + fitness yoga
Saturday – rest
Sunday – rest
I feel like I really need to add in some walking on the days I don’t teach. Weekends tend to be excerise-less but I think a little walking would be good for me + the whole family.

What was your favorite thing you ate last week? Mine had to be either the pasta on Monday, or burger on Saturday. Both were delicious!

running is getting pretty impossible for me these days – the bladder and uterus pressure is just too much. can’t wait until April!
