mini chocolate zucchini pancakes with strawberry chia jam

Happy Monday!  I hope you’re enjoying the long weekend.  Jacob and I are loving not waking up to an alarm.  I’ve definitely got some great sleep in this weekend, even a nap once, which is so not like me.

What’s been rough though is waiting for this little guy to be born.  We’re getting impatient and just want to know when he will show up!


My due date came and went just like that.  Now I’m 40 weeks and 4 days pregnant… waiting.  I didn’t think waiting would be as difficult as it is.  I’ve had more contractions since last Thursday, but now they just seem to get me excited, like will this be the time?!?!  Then no.

The wait continues…

I’ve spent a lot more time in the kitchen this weekend.  It’s one way to help time go by.  Breakfast Sunday morning was pancakes.

It had been too long since I’ve had pancakes.  With zucchini on hand and chocolate on my mind, the two combined into one tasty breakfast treat.

The moment Jacob saw the zucchini in there he pushed his plate away (like a kid).  Bummer for him, but good for me.  I got to have more pancakes and loved every single bite. 🙂

Along with these tasty bites I made some super easy and quick strawberry jam with strawberries that were at the end of their life.  That makes for some super sweet strawberries.

Strawberry Chia Jam

Ingredients

  • 1 cup chopped ripe strawberries
  • 2 tsp chia seeds

Directions

  1. Microwave the strawberries for 1.5 minutes.  Stir in the chia seeds and allow to sit for 5-10 minutes to thicken into a jam.

Now that we have jam, let’s make some pancakes!

Mini Chocolate Zucchini Pancakes
Serves 2

Adapted from yogurt multi-grain pancakes

Ingredients

  • 2 eggs
  • ½ cup + 2 tbsp plain yogurt
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • ½ cup whole wheat flour
  • 2 tbsp cocoa powder
  • ½ tsp baking powder
  • pinch of sea salt
  • 2 tbsp chopped dark chocolate chunks

Directions

  1. Pre-heat your griddle to 350 degrees, or heat a large skillet to medium-high heat. Coat lightly with oil spray.
  2. In a large bowl mix together your dry ingredients. In a smaller bowl beat the egg, yogurt, vanilla and zucchini together with a fork. Stir the wet into the dry until just combined along with the chopped chocolate.
  3. Ladle small spoonfuls of the pancake batter on to the pre-heated griddle. Cook a few minutes on the first side, until you see bubbles forming, then flip. Allow to finish cooking a few more minutes on the second side.
  4. Serve with strawberry chia jam!

I love chia seeds in jam! I would have also loved the zucchini in pancakes too. More for you! I had to work Saturday, but I am loving having Monday off 🙂 Hope you’re little one comes soon!

Hang in there gorgeous! Do you guys have an induction scheduled if things get too far? I ended up getting induced with Kaylin three days after my due date. I was concerned Kaylin would get toooo big for me to deliver (because my sister had issues with that) but she ended up being 6 lbs 14 oz. Anywho….tangent. The pancakes look so totally delicious!And I’m on here to grab that granola recipe. SO good!

Bummer that you are four days late 🙁 even though we all know every day that baby is in there is much needed for full development! My first was 4 days late! I bet the contractions are such a tease, I had zero contractions with my first pregnancy until it was actually time! The next two I thought i was in labor constantly towards the end from Braxton hicks! but just think every contraction you have experienced has done something to get you ready for labor and delivery, one step closer! Those pancakes and jam look fantastic too, I just bought a ton of zucchini today at the grocery store, with some sorta of baked good in mind!
