A good brownie is something that puts a smile on my face.

For some reason I haven’t been baking as much as I used to. When I lived at my parents house I baked all.the.time. Maybe it was because supplies were provided by my parents (I wasn’t paying for groceries) or maybe it was because I had a lot more free time. But when I get around to baking now I still get that calming, enjoyable feeling. Baking is like therapy that gives you something tasty at the end.

This time I had plans to incorporate a few of the products I received from Navitas Naturals.

Here’s what was sent to me…

  • Palm sugar
  • Trail mix (3 berries, cacao nibs and cashews)
  • Cacao nibs
  • Mulberries
  • Maqui powder (maqui is a berry)
  • Sprouted omega blend (chia seed, brown rice and flaxseed – LOVE have been adding to smoothies + oats)

Originally I planned to make my almond butter and pomegranate brownies but instead of almond butter add in PB, then instead of pomegranates add in walnuts + gogi berries. Plans changed when I wanted to try out these products.

I was super happy the palm sugar was sent to me because I actually ran out of natural cane sugar the day before, so that got subbed in.

The cacao nibs were both in the trail mix inside the brownie + on top of the brownie. It added nice texture + sweetness.

This trail mix isn’t like any trail mix I’ve tried before. It’s filled with cacao nibs (love), cashews, gogi berries, mulberries and goldenberries.

I would say, next time I’d pick out the goldenberries for the brownie mix. They were tasty on top of my pb-banana overnight oats, but I wasn’t a big fan of how they cooked up. All the other ingredients in there were great though.

Are you ready to make some super food brownies?!

Peanut Butter Trail Mix Brownies
Adapted from my pomegranate and almond butter deep dark chocolate brownies

Ingredients

  • 1 egg
  • 2/3 cup palm sugar (can sub in natural cane sugar)
  • 1/4 cup peanut butter
  • 2 tbsp canola oil
  • 1/2 cup dutched cocoa powder
  • 2/3 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt
  • 1/3 cup superfood power mix (trail mix)
  • 1 tbsp cacao nibs
  • 1-2 tbsp water

Directions

  1. Pre-heat your oven to 375 degrees. Coat an 8 x 8 glass dish with olive oil spray.
  2. In a mixing bowl, or bowl with a hand mixer combine the egg, sugar, peanut butter and oil. Mix for 3-4 minutes until well combined.
  3. In another bowl combine the cocoa powder, flour, baking soda, baking powder and salt. Pour into the wet ingredients and mix until combined. Add in 1-2 tbsp water if necessary. Stir in the trail mix.
  4. Press the brownie mixture into the dish. The mixture will be very, very thick. Press the cacao nibs into the top of the brownie. Bake for 17-20 minutes, or until a toothpick comes out clean. Allow to cool before slicing.

Oh so chocolaty and good. I have a feeling I may *test* out a crumbled brownie on overnight oats… to make sure it’s okay. Winking smile

    Great recipe I’ve never had brownies with trail mix in them! I usually just have plain chocolate brownies. Nice toppings on your overnight oats 🙂
