Savory Focaccia Breakfast Sandwich

You know what goes really well with Rosemary Garlic Whole Grain Focaccia Bread?

Eggs.

And tomato. 

Spinach too.

Plus cheese.

Yeah, you just can’t go wrong with a breakfast sandwich.  I enjoyed one of these on a not so rushed early morning.

You should really treat yourself to one of these.  And treat your loved ones too.  They’ll be happy.  You’ll be happy.  It’s a win-win situation if you ask me. 

I find breakfast sandwiches to be one of the perfect ways to add veggies to your breakfast.  Nobody looks at it as you trying to sneak in veggies.  It’s just normal thing. 

Spinach and eggs were meant to go together.  Tomato just makes sense, especially as we head into summer and they just keep getting better.  Sharp cheddar is one of my all time favorites, so I had to include it.  Warm melty sharp cheddar that is.

Not-So-Rushed Breakfast Sandwich
Serves 1

Ingredients

  • 1 piece of focaccia bread (about 3 by 1 ½ inches)
  • 1 egg
  • handful of fresh spinach
  • 1 slice of sharp cheddar
  • 4-5 small slices of tomato

Directions

  1. Heat a skillet over medium heat.  Coat lightly with olive oil spray.  Add the spinach and allow to wilt for 1-2 minutes.  Crack the egg into the skillet over the spinach and stir around to mix together.  Shape into the size of your focaccia bread.  After about 2-3 minutes flip and cook on the other side.  Add the cheese and finish cooking the eggs for 1-2 more minutes.
  2. Slice your focaccia bread in half.  Add the egg to the bottom half, pile on the tomatoes and top with your focaccia.

I’m not lying.  It’s amazing.  The homemade bread takes it over the top.  You could add a slather of hummus or pesto on each slice of bread to make it even more wonderful.  I had already powered through my latest batch of green hummusso that wasn’t an option that morning, but it sure will be soon!
