Peanut sauce holds a special place in my heart. Recently it was my birthday and I planned to make my salad roll shrimp bowls with coconut rice and peanut dressing for lunch. To my dismay, when I went to make the sauce right before lunch, I realized that we were out of peanut butter!

What’s a girl to do? I could have gone to the store, but we’re still sheltering in place due to COVID-19, so that was out of the picture.

Instead, I improvised! I had a jar of sunflower seed butter in the fridge and swapped that into my standard peanut sauce recipe.

Woah friends, it was epic. This sunbutter saute sauce stole the show! After that lunch I kept dipping carrots into it and even added a spoonful onto a sweet potato scrambled egg breakfast bowl. So good.

I highly recommend you try the sunbutter version for a peanut free saute sauce. If you don’t have sunbutter or want to use it, I would also recommend almond butter and tahini (sesame seed butter).

What is satay sauce?

Satay is a sountheast asian dish of grilled meat served with sauce. Often the sauce was made from ground peanuts and soy. The peanut satay sauce’s popularity made it so that when we think of satay sauce, we think of peanut sauce. For good reason, it’s a classic!

  1. In a bowl combine all the ingredients together and whisk until smooth. Alternatively blend in a blender (this option makes a creamier satay sauce).

Ingredients 

  • 1/2 cup sunbutter sauce
  • 1/4 cup rice vinegar
  • 1/4 cup coconut aminos
  • 1/4 cup maple syrup
  • 1 tsp sriracha, (use less or more based on preference)
  • 1/4 tsp garlic granules
  • 1/4 tsp ground ginger

Instructions 

  • In a bowl combine all the ingredients together and whisk until smooth. Alternatively blend in a blender (this option makes a creamier satay sauce).

Makes about 1 cup of nut-free satay sauce.

    what would you say are the calories in this? I tried to put it in MFP and says it’s 541 per serving if the recipe made 4 servings – seems extreme, no?
