Weekend run + meal planning

Most weekends Jacob and I have downtime and evenings with just the 2 of us.  Not this weekend!  Friday we had his parents over for pizza (sweet onion, collards and brie pizza to be exact but with a slightly thicker crust – so good!), Saturday my parents for burgers and tonight we’re going to my brother + sister in law + nephew’s for some BBQ.  Spending as much time with family as we have been makes me very happy.

I enjoyed my rest day of walking + foam rolling yesterday.  Well, the foam rolling wasn’t too enjoyable but very necessary. 

This morning I rocked a 6.5 mile run in 54:15.  I had new music going and the sun on my back.  It was such a motivating run.  I actually found myself smiling as I was going along.

Do you ever have runs like that where you’re just left smiling the entire time?

I talked a little bit about the 3-2-2 concept I used last week for my meal planning.  Basically it’s breaking your meals out into these 3 categories each week…

3 meat meals
2 fish meals
2 vegetarian meals

This week I planned the same way!

Here’s the meal plan I put together yesterday before grocery shopping.  I marked which meals were M (meat), F (fish) or V (vegetarian).

M – Saturday: BBQ burgers (same meat patties without the extra sauce and fry toppings) + watermelon

M – Sunday: BBQ hotdogs + brats at brothers – I’m bringing jalapeno poppers!

V – Monday: Mock Thai + corn on the cob

F – Tuesday: Avocado/tuna/hummus melts on english muffin bread (I’ve got 2 loaves baking right now!) + salad + watermelon

V – Wednesday: Spinach, Artichoke and Cream Cheese Layered Tortilla Pie + orange slices

M – Thursday: Portobello pizzas (idea from these) topped with italian sausage, onion and spinach + roasted red potatoes

F – Friday: Salmon cakes + brown rice + spinach salad

Normally I like to make up recipes as I go along with a general idea of ingredients in my head, but with my group fitness certification 2 weeks away I have had to prioritize and focus A LOT more of my time on studying. 

I’m actually really excited about trying some new recipes.  My fellow bloggers are always coming up with tasty meals I want to try right away!

Meal planning really helps not only with the budget, but also helps me manage my time.

In addition to all those meals I prepped a spinach, artichoke and cream cheese layered tortilla pie, stuffed chicken and a simple spinach + pasta casserole to bring along with me when I go see my best friend today.  She had twin boys a couple weeks ago so I’m sure these meals will come in handy.  They’ve got their hands full!

SO sweet of you to bring your friend some food! I’m sure she will really appreciate it! I love seeing your meals for the week. English muffin bread is ridiculous good. Hooray for the awesome run…I can’t wait to RUN! Today=brunch with the rents, a nice walk outside and now I’m getting ready to do a little work.

I love planning meals! It’s a great way to save money and make sure you’re eating some great stuff. I like your 3-2-2 idea. I might wanna try that this week!

I love how you are doing your meals! 🙂 Planning meals for the week helps keep me organized and saves money when you go to the grocery store because you just buy what you need. 🙂
