Baked Yam with Kale and Egg Scramble + Group Fitness News

It had been too long since I ate kale.  I need to remember to buy it at the store more often!  It really is one of my favorite dark, leafy greens.

Kale + yams + eggs + cottage cheese + hummus= such a good combo.  So easy to make too!  Is it breakfast or dinner?  You decide.

Baked Yam with Kale and Egg Scramble
Serves 1

Ingredients

  • 1 yam (or sweet potato)
  • 1.5-2 cups chopped kale
  • 1 egg
  • 2 tbsp cottage cheese
  • 2 tbsp hummus
  • sea salt + pepper

Directions

  1. Heat your oven to 400 degrees.  Poke a few holes in your yam and place in the oven for 30-40 minutes to bake.  It is done when you can slide a knife into the yam easily.
  2. Next, wilt and crisp up your chopped kale in a skillet over medium heat.  That will take about 5 minutes.  I lightly coat my skillet with olive oil spray.  Crack the egg on top of the kale.  Make sure all the kale is covered by egg.  Sprinkle on some sea salt and pepper.  Scramble the egg around until cooked to your liking.
  3. Split the yam in half and add 1 tbsp of cottage cheese and hummus to each half.  Spoon the egg scramble on top of the yam halves. 

Once the yam has been baked this meal comes together in a snap!  It’s a good, cheap meal too.  Eggs are one of my top protein picks.  They’re affordable, complete and oh-so-tasty.

It’s official! I’m registered to get my AFAA primary group fitness certification on Sunday, July 26th.  I was a bit nervous when I hit the submit button, but more excited.

I should get my study materials in a week or so, then I’ll hit the books.  It’ll be here in no time!

Kale is one veggie I’m on the fence about – and there’s not many that haven’t won my heart. I think it’s how I prepare it…I need to give it another go, and I think I would love it this way! Eggs…mmM! 🙂
