In My Belly: Day 4 {Get Back on Track}

I really enjoyed the first installment of in my belly.  How bout you?

While I don’t make it a habit to take pictures of all my food I eat throughout the day, it’s been great for keeping track of my Get Back on Track progress… or minor slip ups.

Ready for another?  I captured Monday, now Thursday again.  To talk about Thursday I have to rewind a bit to Wednesday evening.

It’s story time. 

Wednesday night I went to the final Clark County Running Club 3 miler for the summer.  Right before that when I got home I chowed down at least a cup of raisins.  I was hangry!  We get there, we run.  I kept it easy to start out with and ended at 25:30.  Pretty nice.  Last run before Hood to Coast so I didn’t want to push it too much.  They serve pizza + whatever everyone brings and give out awards.  I munched on fruit + pasta salad right after running.  That’s when it went downhill.  Eating right after running is so not my thing.  My stomach was instantly uncomfortable. 

I get home around 8ish, knowing I need some real food in my stomach for ‘dinner’.  Toast with almond butter and a banana.  Should be easy on my stomach right?  It was, but then I just felt SO full.  Went to bed, feeling too full.  Tried to sleep, was too hot.  I think around 1:30am I fell asleep to then wake up snoozing my alarm a good 3-4 times. 

Story time is over.

It was a double coffee kind of day.  Started with my lemon water then hopped over to the deeeeeelicoius coffee.

And then somehow another appeared in front of me.  Mmmm good.

Seriously, in 9 minutes I begin to sweat, and I even did it right in front of the AC!  Mood officially boosted. 

Breakfast has been the same every.single.day.this.week.  These waffles + hazelnut and chocolate butter blend sauce + fresh blackberries have been all I can think about in the mornings.

We were down to 3 waffles, so I had 1 leaving 2 for Jacob.  Sweet huh?  The sauce and berry amounts stayed the same though.  So saucy!

Plus some greens to round it out.  This was semi-slushy like since I added both water + soymilk where I’d usually only add soymilk.

Wake Up Green Slushy

  • 1 cup liquid (half water half soymilk)
  • 4 swiss chard leaves, de-stemmed
  • 1 banana
  • lots of ice

Blend everything together until as smooth as you can get it.  I was in a hurry leaving my greens not as smooth as they could have been. 

The banana was super ripe making this very, very sweet. 

Headed to the work thing + morning walk at break + snack + just 1 cup of black tea.

Yogurt mixed with almond butter + a blackberry sunflower granola bar crumbled on top.  This was a genius idea!  Seriously, so delicious and satisfying for my belly.

I had debated not sharing this bar recipe until it was perfected, but this combo was out of this world.  You could make the bars just to crumble on top of yogurt and call it good. 

Blackberry Sunflower Granola Bars
Makes 9 bars (or more if you slice them smaller)

Ingredients

  • 2 cups rolled oats
  • 1/2 cup roasted sunflower seeds
  • 1/4 cup shredded unsweetened coconut
  • 1.5 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 large ripe banana, mashed (about 1/2 cup)
  • 2-3 tbsp brown rice syrup
  • 2 tbsp soymilk
  • 1/2 cup fresh blackberries (or frozen and thawed)

Directions

  1. Preheat oven to 350 degrees.  Coat an 8 x 8 glass dish with oil.
  2. In a large mixing bowl combine the oats, seeds, coconut, cinnamon and salt.  In a smaller bowl mix together the banana, syrup and soymilk.  Stir the wet into the dry until fully combined. 
  3. Spread 2/3 of the mixture on the bottom of the pan.  Evenly spread the blackberries on top, mashing a few along the way.  Sprinkle on the remaining oat mixture and gently press in.
  4. Bake for 20-25 minutes until golden.  Allow to fully cool before slicing.

Ever since making the cinnamon vinaigrette I have been officially obsessed with salads this week. 

Lunchtime salad.  Check!

The day was getting pretty close to the end so after my quick walk I grabbed my afternoon snack I just started munching , then realizing I didn’t snap a photo.  Whoops!

The hardboiled egg looked the same as the one on this day… a normal hard boiled egg.

Plus a HUGE pink lady apple.

Crispy, crunchy, sweet + lightly tart.  Perfect.

And some cucumber because it’s the cool thing to do.  And you want to be cool.

Got home, thought Jacob was going out with a friend after work so I cracked this open.  It’s “Friday” after all.

Jacob comes home about a minute after I open it and says we’re going out.  Drink fast Heather, drink very fast.

While I surely wasn’t planning to drink twice in one night, it’s practically a crime to go to a pub and not try their beers right?

Dos IPAs for us.  I ordered a glass.  Yes, you’re seeing that pint correctly.  I had a feeling I’d get a pint when I ordered a glass {Debbie remember me talking about this happening?!}.

I drank a little more than half and had Jacob finish it for me.  It was just too much for me.  This plate of deliciousness?  Yes, finished by me.

Falafel wrap with greens + pickles.  The wrap was really good filled with falafel (although a little skimpy on it), tzatziki, hummus, quinoa, romaine, tomato and olives. 

My falafel is better though.

Guess I was carb loading for Hood to Coast or something. Smile with tongue out

Let’s see… I drank a ton of water all day long.  Totally met that goal. 

Slept much better last night and have a lot to do this morning.  T minus 4.5 hours till my mom is here picking me up to meet out Hood to Coast van!

Better get to it!

Mmm…a falafel wrap sounds good. Looks like a good day of eating! That is a big glass of beer. I like beer, but it fills me up very quickly.
