I absolutely love summer.  Waking up to brighter mornings (not that it’s really light when I wake up Winking smile), less rain, the heat, sunglasses, tank tops and smoothies… what’s not to love?  Some people don’t like being hot, but I’d way rather be too hot than too cold.  It’s just my style.

Although I love the heat, I’m not a huge fan of hot food all the time in the summer.  That’s why green smoothies, salads and BBQ anything is high up on my list of summer eats.

Now I’ve added another new cooler breakfast to the mix.   

Overnight Oatmeal

I love that it’s prepped the night before so all I have to do mix it once and add whatever toppings I want.

Want to make your own overnight oats?  It’s super easy!

Peanut Butter-Banana Overnight Oatmeal
Serves 1

Mix together…

1 ripe mashed banana + 1 tbsp natural peanut butter

Then stir in…

1/3 cup rolled oats
1/2 scoop/serving of plain protein powder (I used brown rice protein)
1 1/4 – 1 1/2 cups of milk (I used plain soy milk)
1 tsp flax seed
1 tsp cinnamon
pinch of sea salt

Cover with plastic wrap and throw it in the fridge overnight, or at least for 3 hours.

The next morning just stir and top with whatever you’d like!  You could top with berries, shredded apple, granola, dried fruit + nuts, more nut butter or add what I did – trail mix!

The trail mix was the first of many samples I received from Navitas Naturals.  It sure wasn’t your typical trail mix filled with gogi berries, mulberries, cacao nibs and cashews.  The sweetness from the cacoa + mulberries mixed with the tartness from the gogi berries was perfect on this tasty chilled breakfast.

The texture turns out creamy like cooked oats, but there is no cooking involved.  As you’re sleeping the oats are absorbing all the liquid and yummy flavors you mix in.  Since there is added protein in there + the protein from your milk it’s perfect post workout too.  I like to have this made for the mornings after lifting because 1) it’s great for my muscles and 2) I’m always in a hurry to get ready for work so it doesn’t take up any of my time.

Win-win right?

    LOVE overnight oats, definitely one of my top summer breakfasts! Especially since it doesn’t require turning on the stove, oven, or microwave.
