Tuesday’s savory meal of baked yam with kale and eggs could have been classified as either breakfast or dinner.  Today is all breakfast.  Yup here I am with breakfast… again.Winking smile

It’s another morning treat that I’m excited to share with you guys.  You’re getting whole grains (carb), egg (protein), banana (carb) and peanuts (fat) all together in one, complete and yummy sandwich!

Whenever I tell anyone about my banana-egg (an egg + mashed banana cooked together), I always get strange looks.  They just don’t know how tasty it is!

I can honestly tell you it has become one of my favorite treats with breakfast.  It’s a great way to use an overly ripe banana.  It adds just the perfect amount of sweetness.

A long while ago I made pumpkin french toast with some added pumpkin seeds on the outside.  They looked so pretty and added a nice crunch to the toasty breakfasdt.  That’s the same idea here.  Chopped peanut on the outside for a nice crunch.

Peanut Crunch French Toast Sandwich
Serves 1

Ingredients

  • 2 slices of bread (or 3 smaller pieces)
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 3 tbsp milk of your choice
  • 2 eggs
  • 1 ripe banana
  • 1.5 tbsp chopped peanuts

Directions

  1. Coat a large skillet with olive oil spray and place over medium heat on the stove.  In a small bowl mix combine one of the eggs, cinnamon, vanilla and milk. 
  2. Dip both sides of the bread into the egg mixture and place on the skillet.  Allow to cook on one side for 3-4 minutes, until it’s crispy, then sprinkle the chopped peanuts on the uncooked side.  Press the peanuts in and flip.  Allow to cook for 3 minutes until done.
  3. Mash the banana in a small bowl with the other egg.  Beat the egg and banana together until fully combined. 
  4. Once the french toast is done cooking, remove from the skillet and pour the banana-egg mixture into the skillet.  Cook on one side for 3-4 minutes, then flip and allow the egg to finish cooking.  If you used 3 slices of bread, cut your banana-egg in half to make a stacked sandwich.

    Hmmm…I have to be honest, the banana and egg combo has me skeptical. But not so much that I wouldn’t try it, especially because this sandwich looks fantastic!

    I have not tried a banana egg, but it sounds totally interesting! What a fantastic breakfast! I love french toast- but I prefer it to have a nice crunch vs. being a little on the soggy side

    That sounds delicious! And I’d love the extra crunch of the peanuts 🙂 I’m a big texture person, and even when I make smoothies for a meal I need something to crunch on. Banana and egg does sound like an interesting combination, although I find that eggs go with a lot of things (have you ever tried them with maple syrup?). I can’t really handle eggs though : my stomach gets really funky. But I bet the recipe would taste great even without them 🙂

      I bet it still would be tasty since you’re aiming for the sweet banana flavor with the banana-egg. I like to add extra texture to my smoothies too. At least that way I dont suck them down too fast.
