Today I’m headed off to an all day body pump training. I’ll actually be there all day tomorrow too.
I feel excited and ready to learn!
This morning I made a double batch of the best waffles so I’d have extra to take along. I’m bringing a lot of snacks. They’ll be necessary.
I’m still fighting nausea every day, and while eating protein filled foods seem to work the best, I have to gag them down. Yogurt and eggs are getting harder up eat, but I make sure to get them both in every day.
Carb are all that sound good. In the form of a bagel and cream cheese everyday. They’re an obsession of mine. I ran out Thursday, so Friday I made Jacob pick some up for me. What a sweet guy.
For my long day today I’ll be packing along….
- Bagel and cream cheese
- Tuna sandwich with spinach on it – heavy on the chopped pickles
- Waffles
- Orange slices
- Strawberry banana smoothie
- Pretzels
- An apple, but they’ve been hard to get down too
- And chocolate pumpkin protein cakes
They look like a carb, but come with a protein punch. Tastes delicious and like a treat, but with no added sweetener.
I’ve made these before, and whenever I have a can of opened pumpkin on hand I try to make them. Deb is the creator of these bad boys. She’s pretty much a genius.
Quick and Easy Chocolate Pumpkin Protein Cake
From Smoothie Girl Eats TooNOTE: I quadrupled the batch and made it in a glass load pan instead of an individual bowls. Since it does take A LOT longer to cook in the microwave than a single serving, the two ends do get a little dry. You could make a single cake shown on Deb’s blog, or stick with the easy and fast quadrupled version here.
Ingredients
- 2 egg whites and 3 eggs
- 1 cup pumpkin (I’ve also made it with mashed banana – delish!)
- 1/2 cup coconut flour
- 2 tsp baking powder
- 3 tbsp cocoa powder
Directions
- Combine the eggs and pumpkin in a bowl together.
- Next mix in the remaining dry ingredients.
- Pour into a glass loaf pan coated with oil. Smooth out and microwave on high for 7-9 minutes, depending on the strength of your microwave. You want the center to look a little moist, but not be moist to the touch.
I’m off to finish getting ready.
I’ve had to make more priority decisions lately. sleep > computer time
It’s tough not being able to do it all, but one thing I’m learning with this this baby is that I don’t have to do it all. It’s okay to be tired and just lay on the couch, or go to sleep at 8pm, or even not do any chores. My amazing husband has been covering all of that lately.
I haven’t been very creative in the kitchen lately either, but that’s okay. As long as I get good food made for Jacob and I that I can eat, I’m happy. I’m sure in a few weeks or months I’ll feel energized and be back to my old vegetable loving self again.
Just taking it one day at a time right now.

Been right where you are! I swear, i only ate carbs for the first 5 months of both pregnancies!! Totally normal! Just go with it – your body will take care of itself!
