I still can’t really believe it’s already December. I mean, I see it on the calendar, and my frozen car yesterday morning confirmed the winter chill, but it’s just so crazy how time speeds up so quickly.
Let’s take a minute today to slow time down for just a sec.
How do you like to slow time down?
One way I like to slow down is by baking. It’s such a relaxing time for me in the kitchen. I don’t worry about the dishes piling up (although my husband wishes I worried about them more), I don’t worry about dinner that needs to be planned or made (although I probably should) and I definitely don’t worry about perfection (although that’s just a plus). For me, kitchen time shouldn’t be stressful. It should be a fun and a comforting place.
Sometimes I go in with a thought in mind or a recipe in hand. This time it was a little of both.
The thought: savory biscuits incorportating goat cheese
The recipe inspiration: whole wheat carrot drop biscuits
The outcome: heavenly
Biscuits will always hold a special part in my heart (and belly). Growing up I remember a Sunday breakfast we’d have as a family often. My dad (the biscuit king) would make biscuits. We’d serve them with my mom’s homemade strawberry jam and honey, along with hard boiled eggs. I always loved that breakfast, mainly because of the biscuits. The eggs were cool too cause we’d each have our own hard boiled egg holder. I should really get some of those…
I’ve been eating and loving biscuits for a long time.
Now when I make them, instead of white flour and a lotta butter, I sub in whole wheat flour and canola oil. You still get the delicious breakable, flakable biscuits, but with a little better nutritional stats. Win-win?
Oh yes.
Savory Goat Cheese Biscuits
Makes 6 biscuitsAdapted from whole wheat carrot drop biscuits
Ingredients
- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1/2 cup milk of choice (I used plain soymilk)
- 1/4 cup canola oil
- 2 ounces goat cheese, an herbed variety broken into chunks
- 1/3 cup green onion, chopped
Directions
- Preheat the oven to 400 degrees. Mix together the milk and oil in a bowl. In another bowl combine the flour, baking powder, sea salt, pepper, goat cheese and green onion. Mix the wet into the dry until just combined.
- Form the dough into a rectangle and cut into 6 even pieces. Place them on an ungreased baking sheet and sprinkle with a pinch of sea salt (optional). Bake for 13 minutes and allow to cool on the pan.
Nothing beats a homemade biscuit hot outta the oven.
