Here we are back again to another week. The weekend flew by. Seriously, where does it always go?
I did pretty good with my to-do list yesterday.
- Final assignment for my HTML class (4 page website)
- 4-6 mile run (no Joe, but I’ll walk him later)
- The final carpet shampooing upstairs (dining room and walk way) and downstairs (hall)
- Prep dinners for the week + make Hawaiian pizza tonight (yum)
- Pick up my parents from the airport
- Go to the mall and pick out something for $10 with a card I got in the mail… probably a new workout tank top.
- Make dog food for Joe. I got a recipe for dogs with sensitive stomachs from the vet we’re going to try out. It’s more natural + I’m sure he’ll love it. I’ll share for sure this week!
Finishing up 5.5 out of 7 is pretty good to me! This week’s meal are pretty simple so even though I didn’t prep it’ll be nice n easy.
Before even tackling any of this I made twin mugs of oatmeal.
I always offer to make Jacob oatmeal when I’m cooking some for myself. 90% of the time I get a no. Still, I continue to offer and then I got a yes!
Shredded Apple Oats
Serves 2Combine the following in a pot, then turn the heat to medium…
- 2 1/4 cups liquid (half water half soymilk used here)
- 1 cup rolled oats
- pinch of sea salt
- 1 tsp cinnamon
- 3/4 of a grated apple (skin left on)
Allow to cook for 10 minutes, stirring occasionally. Once the oats have thickened to your liking divide into 2 bowls, or mugs. Add your toppings…
- 1/4 of a grated apple (skin left on)
- peanut butter
- crunch nuts and seeds would be tasty here too
Normally I’m all about banana in my oats, but since Jacob was having some I left it out. The shredded apple was so tasty in here I’ve got to do it more often!
I love these mugs Jacob got me. The little spoons are so much fun to eat out of. They even came with lids to take food on the go.
Now that I finished my last HTML assignment I can focus on my group fitness certification studies! There is a 30 day outline to follow which will be perfect. My test is in 30 days + 1 week, so that extra week will give me time to catching up/extra preparations. I opened up the book last night and cannot wait to dive into it!

owwwwwwwwwwwwwwwwww! I love the idea of shredded apple! BTW- I totally just said owwwwwwwww out loud. What a yummy breakfast. The best breakfast I had this weekend? Eggs! I am a little obsessed with eggs right now- they really help me hit my protein goals with the peanut. Hooray for the group fit cert. Whoop!
LOVE eggs! I don’t think there’s a day I go withone having 1 or 2.
I like the look of these oats. I haven’t tried them with apple so I’m looking forward to making these soon!
This weekend I didn’t have anything fun for breakfast but my favorite last weekend was french toast with strawberries and lemon curd! Still drooling about that one…
