Ingredients for pumpkin pie yogurt, including Greek yogurt, vanilla protein powder, pumpkin puree, pumpkin pie spice and Simple Mills Sweet Thins

Simple ingredients you'll need

  • Nonfat Greek yogurt - This is the creamy base and a big part of the protein. Plain Greek yogurt works best so you can control the sweetness.
  • Pumpkin puree - Use canned pumpkin puree, not pumpkin pie filling. Pumpkin pie filling already has added sugar and spices, so it changes the flavor and sweetness.
  • Vanilla protein powder - Adds extra protein, sweetness, and a little vanilla flavor. Use your favorite brand.
  • Pumpkin pie spice - The star of the show! Store-bought works, or use a homemade pumpkin pie spice mix.
  • Cinnamon - A little extra cinnamon makes those warm spices really pop.
  • Maple extract - Just a dash gives it that cozy maple flavor without any added sugar.
  • Optional toppings - Crushed Simple Mills Sweet Thins (Honey Cinnamon) and whipped cream for that pie crust and topping feel.

How to make high protein pumpkin pie yogurt

  1. Start by adding the Greek yogurt, pumpkin puree, and protein powder to a small bowl or mixing bowl. Sprinkle in the pumpkin pie spice and cinnamon, then add a dash of maple extract.
  2. Give everything a good stir until it's completely smooth and no streaks of pumpkin or pockets of protein powder are left. A rubber spatula or spoon works great here, just make sure you scrape the sides and bottom of the bowl so it all gets mixed in.

  1. Once it's creamy and well combined, give it a taste. If you want it a little sweeter or more spiced, now's the time to adjust.
  2. Finally, divide the yogurt between 2 bowls or jars and add your crushed Sweet Thins. You can layer them in the bottom of each bowl or jar as a crust-like base before adding the yogurt, or sprinkle them over the top. Add a little whipped cream if you're using it, then grab a spoon and enjoy it right away!

Recipe tips

  • Mix the protein powder in well. Some protein powders clump more than others. Stir the yogurt, pumpkin, and protein powder together first, then add the remaining ingredients.
  • Thin it out if needed. Protein powder can make the yogurt pretty thick. If it's thicker than you like, stir in a splash of milk.
  • Taste and adjust. Every brand of yogurt and protein powder is a little different. Add more pumpkin pie spice or cinnamon if you want it extra spiced.
  • Use plain pumpkin puree. Canned pumpkin puree keeps it healthy and lets the spices shine like they should!
  • Add the topping right before eating. The crushed cookies will soften if they sit on the yogurt too long, so add them right before serving for the best crunch.
  • Keep it cold. Don't leave it sitting out at room temperature for more than 2 hours.

Serving suggestions

This pumpkin pie yogurt bowl is great as an afternoon snack, a light breakfast, or a healthy dessert after dinner. A few fun ways to serve it:

  • Top with pumpkin seeds or chopped pecans for a pecan pie-inspired crunch.
  • Swap the Sweet Thins for cinnamon graham crackers or a sprinkle of graham cracker crumbs.
  • Add sliced apples or banana on the side for a bigger snack.
  • Layer it in a glass with crushed cookies for a little parfait.
  • Spoon it over overnight oats for an extra protein boost at breakfast.
  • Pair with your favorite granola (we love hemp granola for this one!).

Meal prep & storage

This is a great way to prep a few snacks for the week!

Mix up the yogurt base (without the toppings) and store it in an airtight container or mason jar in the fridge for up to 3 to 4 days.

The protein powder may thicken it a bit as it sits, so give it a stir (and add a splash of milk if needed) before eating.

Keep the crushed cookies and whipped cream separate and add them right before serving so everything stays fresh and crunchy.

Substitutions, optional variations & dietary adjustments

Below you'll find a list of substitutions that will work well in this pumpkin pie yogurt recipe.

Yogurt - Plain Greek yogurt in any fat percentage works. Regular plain yogurt is thinner and has less protein. Vanilla Greek yogurt or vanilla yogurt also works, but it will be sweeter.

Dairy-free - Use a thick dairy-free yogurt and a plant-based vanilla protein powder. The protein will be lower depending on the type of yogurt you choose.

No protein powder - Leave it out and sweeten with a little pure maple syrup or honey instead. You'll lose the extra protein, but it will still taste like pumpkin pie.

Maple extract - Swap it for a little pure maple syrup or a teaspoon of vanilla extract.

Pumpkin pie spice - Use a homemade pumpkin pie spice mix, or just use extra cinnamon.

Toppings - Try cinnamon graham crackers, graham cracker crumbs, granola, pumpkin seeds, chopped pecans, or a few mini chocolate chips.

Pumpkin pie smoothie - Blend the ingredients with milk and ice for a quick pumpkin pie smoothie.

Gluten-free - The yogurt base is naturally gluten-free. Just check the labels on your protein powder and toppings.

FAQ

How much protein is in this pumpkin pie yogurt bowl?

Around 24 grams of protein per serving, depending on the brand of Greek yogurt and protein powder you use. That's a lot of protein for a snack that tastes like pumpkin pie!

Can I use pumpkin pie filling instead of pumpkin puree?

I don't recommend it. Pumpkin pie filling has added sugar and spices, so it makes the bowl much sweeter. Plain canned pumpkin puree keeps it healthy and lets you control the flavor.

Can I make this without protein powder?

Yes! Just sweeten it with a little pure maple syrup or honey instead. It will still be creamy and delicious, just with less protein.

Can I use vanilla Greek yogurt?

You can! Vanilla Greek yogurt will make it sweeter, so you may want to taste it before adding anything else.

Can I make it ahead?

Yes. Mix the base and store it in the fridge for up to 3 to 4 days. Add the toppings right before you eat it.

Is this a healthy pumpkin pie snack?

It's a great way to enjoy pumpkin pie flavor with lots of protein and no added sugar in the base. Greek yogurt also has live cultures, which is a nice bonus for gut health.

Ingredients

Instructions

  • Combine the ingredients. Add the Greek yogurt, pumpkin puree, protein powder, pumpkin pie spice, cinnamon, and maple extract to a bowl.
  • Stir until smooth. Mix until smooth and well combined, with no streaks or clumps of protein powder.
  • Divide, top and serve. Divide the yogurt between 2 bowls or jars. Layer the crushed cookies in the bottom as a base before adding the yogurt, or sprinkle them on top. Add whipped cream, if using, and serve right away.

Notes

Mix in stages: Stir the yogurt, pumpkin, and protein powder together first so the powder doesn't clump. Then add the spices and extract.
Too thick? Protein powder thickens yogurt quickly. Stir in a splash of milk until it's how you like it.
Taste and adjust: Yogurt and protein powder brands vary. Add more pumpkin pie spice or cinnamon for extra spice.
Use pumpkin puree: Pumpkin pie filling has added sugar and spices, so stick with plain canned pumpkin puree.
Toppings last: Crushed cookies soften on the yogurt, so add them right before eating.
Storage: Keep the yogurt base in an airtight container in the fridge for up to 3 to 4 days. Stir before eating.
Food safety: Don't leave it at room temperature for more than 2 hours.
