All week long I’m helping out with vacation bible school (VBS) at my mom’s church. We’re working with the kindergarten class and boy are those kids tiring! Hunter’s been doing great. I keep him strapped on me in the carrier and he sleeps almost the entire time. I actually thought he’d be more fussy but he’s been an angel!
We’re there all morning long, then once I’m home I feed Hunter, chow down and crash. I’ve been in a serious need of a nap each day so far. Who knew little kids were such energy suckers? A little glimpse of what’s the come I guess. 🙂
Once again, I’m relying on mini meals! They’re my favorite + I can make them ahead of time.
My first mini meal I shared was egg-hummus salad. This time it’s lentil feta salad that I’ve been munching on all week.
Normally I’m not an olive fan, but the tiny bit of it in here really hits the spot along with salty feta.
I love how packed with protein lentils are. Did you know that 1 cup of cooked lentils has 18 grams of protein?! I sure like that! While lentils in them selves are not a complete protein (meaning they’re missing one or more essential amino acids), if you pair it with a grain (hint hint whole wheat pitas!), you’ve got yourself a complete protein. It’s as easy as that.

Lentil Feta Salad
Makes about 4 cupsIngredients
- 1 cup dry green french lentils
- 1.5 cups chopped tomato
- 4 ounces feta, crumbled
- 1 tbsp olive oil
- ¼ cup finely chopped green olives
- sea salt and pepper
Directions
- In a medium pot add the lentils and 3 cups water. Bring to a boil, then reduce to a simmer. Allow to cook for 25-35 minutes, or until your lentils are tender, but not mushy. Remove and drain off excess water.
- In a bowl combine the lentils, tomato, feta, olive oil and olives. Season with sea salt and pepper to taste.
- Serve chilled or at room temperature with soft whole wheat pita or crunchy pita chips.
Nom nom nom.

wow girl, props to you for helping out with vbs! we are having vbs at our church this week too, and you’re right, it just zaps the energy right out of you!
Ahhh I’m so glad you’re working with the kindergarteners!!!! I taught kindergarten for a while and LOVED that age, but you’re right, it’s exhausting. That’s why I always say I don’t think any teacher could work 12 months out of the year…I always need that 6 weeks in the summer to recover and feel like a normal person again.

yes love lentils, I took a break from them due to some health issues, but thinking of adding them back into my diet from time to time, as I love them! they are easy to make too!
