Hey!  Long time no blog.  🙂

I last left off with a giveaway (hurry one more day to enter!) and shared that we had one more thanksgiving feast to attend.  We spent the weekend in Seattle with my side of the family.  So much good food, relaxation (I even took a nap on Saturday) and fun times playing games with the family.  Here’s a look at what we ate.

Delicious food!  My contribution was cranberry-peach sauce (using a ton of the peach jam we canned in September) and shredded sweet potato whole wheat bread.  Both I would repeat exactly the same next year!

Since arriving back home late Sunday evenings I’ve felt out of rhythm… like I haven’t accomplished much and just feel without a plan.  Sometimes weeks are a bit funky and this is one of them.  Thankfully I meal planned on our drive up so after grocery shopping Monday afternoon we were set for our asian food week.

I’ve been obsessed with salad rolls lately, and after Jacob suggested a couple weeks back that we eat more asian food because it can be healthier, I decided to have a whole week of asian meals.  I just had to take advantage of him being okay with MORE vegetables. 🙂

I picked up a few books from the library for inspiration.

Here’s what we have planned this week:

Monday: cashew chicken with broccoli and rice (from william-sonoma asian food made fast)

Tuesday: fried rice with leftover chicken – was supposed to be crab but I didn’t want to fork out what the grocery store was asking (from from william-sonoma asian food made fast)

Wednesday: shanghai noodles with chicken (from from william-sonoma asian food made fast)

Thursday: spinach and mushroom wraps (from asian wraps & rolls) + rice

Friday: black eyed pea croquettes (from the kind diet) (okay not very asian, but they are delicious!) and salad rolls

So far we’ve been loving the dinners.  Jacob even complimented me on them last night… and when the hubs approves of all the dinners, something right must be happening.

I’m a big fan of how quickly they come together and also how full I feel throughout the evening.  Most nights I don’t feel the need to snack since they are filling dinners that keep my belly happy for a long time.

The one thing I’ve noticed with these dinners is the lack of dairy, which isn’t a big deal, just an observation.  Meals so far have pretty much been a starch (rice or noodles), protein and veggies.  I’m liking them and plan to continue trying many more asian dishes!  And that will have to include a Japanese cheesecake I pinned a while back.  It’s Japanese!  🙂

Homemade miso soup is one I’m looking forward to trying next week and also getting a bit more fish into our diets instead of just choosing a meat for the week (which seemed to be chicken this week).  Jacob lived in Japan for a year and had miso soup at breakfast everyday, so I’m sure I’ll have high standards to live up to.

Happy almost weekend!  I’m hoping to pop in again soon with a pregnancy update.  I’m getting close to 30 weeks along now.  Geez, time flies!
