Why hello there.

After a weekend away from my computer, it’s sure nice to be back! Less computer time meant more cleaning time. Wwwwwwhhhhhhyyyyyyy?!?!?!

Somehow weekends always turn into a big cleaning fest over here. How is it that my house needs to be clean every-single-weekend? Are we really that messy (yes I am)? Can I blame it on the animals?

Made an awesome hardwood floor cleaner that works great! More to come on that.

Cleaned the shower, downstairs bathroom AND upstairs bathroom. All with homemade cleaners again – I’m on a kick!

Finished ALL the nursery painting. Mural is done + wall next to it is fully painted. I’ll get pictures up soon!

Took out our old ugly pantry and installed wire shelving over the washer/dryer. It’s so much more organized now!

Hmmm more stuff happened around the house, I guess I just don’t remember it. Plus I ran yesterday which started in sunshine, then ended in hale. CrAzY! Some hunting at Goodwill for frames happened too. I was pooped by the end of the day! Did the time switch mess with you? I think it did me.

With every good weekend, there is always food. Good food. Savory food, sweet food and simple food. Today it’s all about the sweet and simple food. But starting with the savory avocado.

Chocolate avocado pudding

Oh, and it’s also Secret Recipe Club reveal day! For this month I was secretly assigned the blog Gluten Free A – Z Blog to scour through. For the longest time I was set on making coconut flour cookies, but then once I saw the chocolate avocado pudding, I knew it was destiny. There is food destiny after all.

You see, I’ve seen avocado pudding all over the place. It’s been on my must make list, but for some reason I never get around to it. Lucky for me, the SRC helped me get to it and make that avocado pudding!

It’s so simple too. Just 5 ingredients. That’s all you need.

Avocado + cocoa powder + vanilla extract + maple syrup + milk

Blend it all up and boom you’ve got pudding! No heating, stirring or waiting required.

If you’ve been like me and have been putting making avocado pudding off, don’t wait any longer. Take the plunge right now. You will be so happy you did!

Chocolate Avocado Pudding
Serves 2

Adapted from here

Ingredients

  • 1 ripe avocados
  • 1 tsp real vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1/2 cup milk of choice

Directions

  1. Slice the avocado and remove all the meat. Place the avocado meat along with the remaining ingredients in a blender. Blend until smooth.
  2. If needed, scrape down the sides and add a bit more milk to get things moving.
  3. Chill if not eating right away!

Notes

  • Do as I say, not as I do. Use a fulling ripe avocado here, not semi-ripe avocado. The softer your avocado is the shorter amount of time you have to blend. My blender was starting to smoke by the end since I was running it for soooooo long.
  • If you end up having to blend for a really long time, you might want to stick it in the fridge/freezer for a short time to chill it.
  • It is highly addictive.

My favorite part with this treat (other than how great it tastes), is that it’s filling! The avocado is full of healthy fats, leaving you feeling satisfied with less. Just like with my fudgy vegan chocolate mousse, you’re left with a satisfied feeling. Instead of avocado there, it’s made silky smooth with tofu. You would never know though!

It’s kind of a sexy treat too. Add in some fruit for dipping and share it with your loved one.

Or be like me and make it on a Sunday when your husband is working and proceed to eat it all by yourself… at least I ate it in 2 sessions and not all at once. 😉

      Nope you can’t taste the avocado at all, and if my avocado had been super ripe (like it should be for this recipe), then it would have been suuuppppeer smooth. Still with a semi-ripe avocado it was pretty dang smooth, just some tiny pieces I couldn’t get to break down. I’m definitely excited to make it again once the rest of my avocados get super ripe.
