Easy Crispy Chicken Cutlet Bowl (Baked, Not Fried!)

I’m a mom of 4 trying to get real food on the table without losing my mind by 5 pm.

This chicken cutlet bowl came out of exactly that kind of night – I wanted something crispy and satisfying, but I did not want to stand at the stove frying chicken for 20 minutes while everyone yelled that they were starving.

So into the oven it went, and honestly? It came out even better than fried.

Big golden brown crust, juicy inside, and zero grease splatter on my stovetop. Win, win, win!

Then I sliced it up and piled it over lettuce, tomato, red onion, and pickles with a big drizzle of burger sauce, and turned the whole thing into a burger bowl.

Now it’s not just dinner, it’s THE dinner. The whole family is hooked!

It’s baked, not fried – All that crispy, golden brown panko texture, none of the oil splatter or standing over a hot pan.

It’s basically a deconstructed burger – Lettuce, tomato, red onion, pickles, and burger sauce make this feel like your favorite burger, just in a bowl.

It’s kid-approved – My whole crew eats this one without a single complaint, which in my house is basically a miracle.

Simple ingredients you’ll need

  • Ground chicken breast – The base of our crispy cutlet. It’s lean, mild, and soaks up all the seasoning beautifully.
  • Italian seasoning – For that warm, savory flavor that makes this taste like way more effort than it actually is.
  • Garlic powder – Because garlic powder makes everything better. Non-negotiable in my kitchen.
  • Sea salt & ground black pepper – Simple seasoning that lets the other flavors shine without overpowering them.
  • Egg – Whisked, to help the breading stick so you get that crust in every single bite.
  • Flour: –The first layer of our breading station. It gives the egg something to grip onto.
  • Panko bread crumbs – For that extra crispy, golden brown crunch that regular breadcrumbs just can’t match.
  • Parmesan cheese – Grated, mixed right in with the panko for a salty, cheesy crust that takes this over the top.
  • Toppings – Chopped iceberg lettuce, red onion, tomatoes, pickles, and homemade burger sauce (swap the mayo for blended cottage cheese!) – this is what turns it from “chicken dinner” into a full-on burger bowl.

How to make

  1. Preheat your oven to 450 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix the ground chicken with the Italian seasoning, garlic powder, salt, and pepper until just combined. Don’t overmix, or it’ll get tough.
  3. Set up your workstation: flour in one bowl, whisked egg in a second, and panko mixed with parmesan in a third. This is basically the same setup you’d use for chicken tenders, just bigger!
  4. Lay a piece of parchment paper on your counter and lightly dust it with flour. Place the chicken mixture on top, sprinkle a little more flour over it, and press it into one large, even cutlet, about ¾ inch thick. Take your time here, an even thickness means even cooking.
  5. Sprinkle flour evenly over the top of the cutlet, then spread the whisked egg over it, followed by the panko-parmesan mixture, pressing gently so it sticks.
  6. Carefully flip the cutlet, then spread the remaining egg over the second side, followed by the remaining breadcrumbs mixture, pressing to coat.

  1. Transfer the breaded cutlet to your prepared baking sheet and spray the top lightly with oil. This little step is what gets you that deep golden brown crust!
  2. Bake for 18-23 minutes, until the top is deep golden brown and the internal temperature reaches 165 degrees F.

  1. Let the cutlet rest for a few minutes before slicing, this keeps all the juices where they belong.
  2. Build your bowls with lettuce, tomatoes, red onion, and pickles. Top with the sliced chicken cutlet and a good drizzle of burger sauce, and dinner is served!

Recipe tip

  • Press your cutlet to an even ¾ inch thickness all over. Thin spots will cook faster and can dry out.
  • Don’t skip the oil spray before baking. It’s what gives you that deep golden brown, crispy crust without frying.
  • Use a meat thermometer if you have one. 165 degrees F internal temp means it’s done, no guessing.
  • Let the cutlet rest a few minutes before slicing so all those juices stay put.

Serving suggestions

  • Serve it just as written, bowl-style, with all the burger fixings & crispy sweet potato fries.
  • Swap the lettuce base for cooked rice if you want something heartier.
  • Add a handful of shredded cheese or a sprinkle of green onions on top for extra flavor.
  • Cut into large pieces and serve between burger buns for a crispy chicken sandwich.

Meal prep & storage

This is a great one to prep ahead! Bake the cutlet, let it cool completely, then store leftover cutlets in an airtight container in the fridge for up to 5 days.

Chop your toppings and store them separately so everything stays fresh and crisp.

When you’re ready to eat, reheat the sliced cutlet in the oven or air fryer for a few minutes to bring back that crispy texture (the microwave will work in a pinch, but you’ll lose some of the crunch).

Low-carb – Skip the flour dredge and go straight from chicken to egg to panko, and serve over greens instead of rice.

Frequently asked questions

Can I make this ahead of time?

Yes! Bake the cutlet, let it cool, and store it in the fridge. Reheat it in the oven or air fryer right before serving so it stays crispy.

Can I fry this instead of baking it?

You can, though I love baking it because it’s so much easier to clean up. If you do fry it, use enough oil to shallow fry over medium heat until golden brown on both sides.

What can I use instead of ground chicken?

Ground turkey is a great 1:1 swap. You could also use a boneless chicken breast, pounded thin with a meat mallet, if you’d rather have a solid cutlet instead of ground.

Do I have to use panko breadcrumbs?

Panko gives you the crispiest texture, but regular breadcrumbs will work in a pinch. The crust just won’t be quite as crunchy.
