In my 15 years of food blogging, I have neglected to share more recipes for one of my very favorite foods – roasted sweet potatoes!
I have plenty of recipes for white potatoes (hello crispy potato bites and old bay potato wedges). For some reason, sweet potatoes have not had their spotlight yet.
Today that all changes!
We’re kicking it off with a bang with the best sweet potato fries – yup!
These crispy sweet potato fries are baked in the oven and will make any sweet potato lover so happy. They offer up delicious crispiness, with a sweet center.

Sweet potatoes come from the earth and offer up a lot of goodness including:
- Fiber
- Vitamin A
- Vitamin C
- The antioxidant carotenoids
- Potassium
The best sweet potato to use for fries
You may have seen a few different types of sweet spuds at your grocery store or the farmer’s market. Let’s chat about the different kinds, and which works best for sweet potato fries. We’ll also talk about yams as they often get lumped in with sweet potatoes.
- White (Hannah) sweet potatoes – the inside of the white sweet potato is firm white flesh, great for fries
- Japanese sweet potatoes – white flesh, also firm and great for fries
- Purple sweet potatoes – purple flesh that is dry and not very sweet, but works for fries
- Jewel yams/sweet potatoes – the orange sweet potatoes flesh is semi-firm and okay for fries
- Garnet yams – orange flesh, pretty moist and not optimal for fries (you end up with soggy fries) but great for healthy dairy-free sweet potato casserole!
My favorite that is readily available at a regular grocery store is the white (Hannah) sweet potato. I love that they are not very moist, so they’ll crisp up nicely!

How to make crispy sweet potato fries with chipotle mayo
Step 1: Preheat your oven to 425 degrees F. Line 1-2 baking sheets with parchment paper.
Step 2: Slice (and peel if you’d like) your large white sweet potatoes into an even fry shape. Place them in a large bowl and toss with arrowroot, sea salt, and pepper. Next, add the avocado oil and toss to coat.
Step 3: Place the fries on your prepared baking sheet in a single layer, making sure to not overlap or crowd the sweet potato fries. Bake for 15 minutes and then flip the fries. Bake another 15-20 minutes until crispy.
Step 4: To make the chipotle mayo, combine mayonnaise and the chipotle in a blender. Blend until smooth.
Step 5: Dish up this perfect side dish and enjoy!
Note – Feel free to add in your favorite seasoning too – some garlic powder, chili powder, or your favorite BBQ seasoning mix would all be delicious additions!
Tips for crispy baked sweet potato fries
- Make sure to leave space between your fries. Crowding the pan will steam the fries and won’t give you crisp edges. We want to crisp them up like regular fries.
- Don’t skip the arrowroot powder – this helps to absorb any excess liquid. Don’t have arrowroot powder? Use cornstarch.
- Allow them to cook longer if needed to get to the perfect crispiness.
- If your fries vary in size some may finish before the others – just remove those and keep cooking the rest for best results.
Can you cook these in the air fryer?
Yes, you absolutely can! You can turn this recipe into an air fryer sweet potato fries super easily.
Follow the prep instructions above, but instead of heating the air fryer to 425 degrees F, reduce it to 400 degrees F.
Your bake time will reduce slightly in the air fryer, closer to 15-20 minutes total depending on how much sweet potato you air fry at once.
Cook in batches and ensure they are in an even layer without overlapping to initially cook them to your desired crispy texture.

How to store
Leftover sweet potato fries can be stored in an airtight container in the fridge once cooled to room temperature.
They will stay fresh for up to 1 week and can easily be reheated in the oven or a warm skillet.

White sweet potatoes – For this recipe, Hannah white sweet potatoes (best choice), Japanese sweet potatoes, purple sweet potatoes, or orange sweet potatoes will work.
Arrowroot powder – Arrowroot starch and corn starch are both great alternatives to arrowroot powder.
Avocado oil – Olive oil or melted coconut oil work great here too. You could also use an avocado oil spray in place of measuring the liquid oil.
Chipotle mayo – An alternative dipping sauce would be fry sauce or homemade special sauce – both tasty options!
