I am sure glad it’s Saturday. What about you? How has your morning been?
I just got back from body pump, ate a meatball sandwich (yum) and am now munching on some extremely ripe cantaloupe… maybe too ripe? These past couple weeks working out has left me starving! And I even make sure to fuel well before. Doesn’t matter though. Every time I get home I need to eat right away. Guess there is a growing little boy in me, maybe that has something to do with it. ๐
So how did I fuel for my workout? Custard oats! But not just 1 egg today…
… I went for 2! Two is better than one here, for sure. And 2 eggs really do keep you soooo much more full.
I ate this big bowl of double custard banana oats around 7:30am, and then when I got home at 11:15am I was starved again, but that’s only because of the workout. I made double custard oats earlier in the week and they seriously held me over for 4 hours. Normally I eat every 2-3 hours, so that extra saying power was pretty impressive.
If you’ve never tried custard oats before, start with 1 egg first. Some people might not like the flavor, but I do. Also, adding a banana in takes over all the flavor anyway. And PB in my banana oats… well that’s just a given. Give them a try, I promise you won’t be disappointed!
Double Custard Banana Oats
Serves 1Ingredients
- 1/3 cup rolled oats
- 1 cup water
- 1 tsp cinnamon
- pinch of sea salt
- 1 large banana, sliced
- 2 eggs
- 1.5 tbsp peanut butter
Directions
- In a small pot over medium heat, combine the oats, water, cinnamon, sea salt and banana. Allow to cook and thickened up (about 5-6 minutes), then stir in the eggs that have been beaten with a fork.
- Cook for 3-4 minutes until the egg has fully cooked together and your oats look creamy.
- Top with PB!
- Stir everything together and enjoy!
And this is really what it looks like when I start to eat it. All mixed up to oatmeal perfection.
And now that my belly is full, I’ve got my workout in for the day and the heaters are on in the house, I’m going to hop on the couch and read. Which will likely result in me falling asleep… I hope. ๐

Heather, I know I already commented, but I thought I’d let you know that I just made these oats for breakfast and they were DELICIOUS! I ended up using 1 egg and 1 egg white and cooked them over the stove top. I added a little vanilla extract as well and they were soooo creamy and delicious! Thanks for a great recipe!

I LOVE this recipe! I’ve been thinking about making custard oats for some time now, but never have! Two eggs definitely sounds like the way to go though ๐
Is there anyway this could be done in the microwave?
Hmmm I think you’d have to stop the microwave a ton and stir to try and get the creamy texture. My experience with microwaved eggs is they kinda turn into 1 egg piece, but do experiment and let me know how it goes!
I’ve yet to try your custard oats. I’ll be making them (or these double custard ones) soon!

What a great idea! I’m always looking for ways to add a little extra protein to my diet, so this sounds perfect. I love the original custard oats, so I’ll have to give this a try!
The Oats look great! When it’s cold out, nothing beats a big bowl of oatmeal! I love the extra protein in them with the eggs!
