I had so much planned for yesterday (speaking of yesterday, did you check out yesterday’s core workout video?!) and didn’t get to do any of it!  It was going to be a very fitness-filled day, but sadly no fitness happened for me.

No teaching in the morning… Sad smile

No torturing my mom and friend with a lunch time workout…

And no evening run with my mom and the running club.

It’s obvious now that Jacob wants to get me sick Winking smile

The sickness is making its way back to me so I took the day as a rest day, just like the day before.  I’m hoping today is a much better day and I feel more like myself.

However I feel, I’ve got a great workout planned for the lunch time workout.  I may be more drill instructor that participant/instructor.  Either way I’m good.

While my fitness has been a bit of a fail, my dinner was not!

I took a simple chicken breast, covered it in italian seasoning + garlic granules + pepper + sea salt, skewers the pieces up and grilled them to perfection.

I’ve made this chicken recipe so many times, but throw it on some sticks and its like a new recipe.  So much fun!

Grilled Italian Chicken Skewers
Serves as many as you like

Ingredients

  • chicken breast (figure 4 ounces per person)
  • Italian seasoning
  • garlic granules
  • sea salt
  • pepper
  • wood skewers

Directions

Tip:Soak the skewers in water for 30 minutes prior to cooking to prevent them from burning up.  I broke my skewers in half to make them a bit smaller.

  1. Dice your chicken into 1 inch cubes.  Toss the chicken in the seasonings.  You’ll want to go heavy on the italian seasoning, and add just a little sprinkle of the remaining seasonings.
  2. Thread the chicken through the skewers.  Cook for 2-3 minutes on each side over a pre-heated grill.
  3. Serve up the fun!

So now you can see this recipe isn’t much of a recipe… more a method.  There is no right or wrong way to make it.  Keep it simple and have fun!

It’s really tasty with grilled zucchini and corn on the cob too. Smile
