- Heat a large dutch oven (or a large pot) to medium heat and add the ghee. Once melted, add the chicken breast, ½ tsp sea salt, and ½ tsp pepper. Sear on one side for 4-5 minutes, flip, and sear on the other side for 4-5 minutes. You’re looking for a nice golden color on the chicken.
- Add the onion, celery, and carrots into the pot, along with the remaining sea salt and pepper. Saute the veggies with the chicken for 3-4 minutes. Add the garlic and ginger and saute for 1 minute.
- Next, pour in the broth. Stir in the turmeric, thyme, bay leaf, and red curry paste. Simmer for 20 minutes, or until the chicken is fully cooked through.
- Remove the chicken from the soup and turn the heat off. Shred chicken, or dice tit into bite-size pieces. Stir in the kale and coconut milk. Next stir in the bone broth powder. Lastly, add the chicken pieces back into the soup.
- Serve as is, with your favorite crusty bread, or even over rice!

Substitutions
Below you’ll find a list of substitutions that will work well in this good chicken soup recipe.
If you try something different out, please leave a comment below letting us all know how it turned out!
Ghee – Butter, olive oil, and avocado oil are all good alternatives.
Chicken breast – You can substitute chicken thighs for the chicken breast, or purchase a rotisserie chicken and remove the chicken meat from it. Cooking a whole chicken at home and using the chicken from it will work too! Turkey works too! You can also make this soup vegetarian and add a can of chickpeas instead of using chicken.
Fresh garlic – If you don’t have fresh cloves of garlic on hand, use dried garlic.
Fresh ginger – Dried ginger will work here too.
Vegetable broth – Don’t have vegetable broth on hand? You can use chicken broth or even just water – the soup will still be incredibly flavorful!
Coconut milk – Can’t use coconut milk? Use heavy cream instead.
Kale – Swiss chard or spinach are good alternatives to kale. Amp up the veggies and add diced sweet potatoes into the mix.
Turn this into a chicken noodle soup by adding a package of egg noodles!
