I feel so lucky.

My man has been trying everything I make.  Since he decided to not eat meat for a while and try to increase his enjoyment of healthy foods, he’s been willing to try and eat A LOT more new foods.  I used to make foods, like kale salad, and offer it to him knowing he would say no.

Now he tries a new food, starting off with a positive attitude, and can actually enjoy it without initial negative thoughts about the food.

When he tried kale salad for the first time, here’s what he thought… ‘my first bite was really strong, but then I got used to it’.  And he ate all of it, multiple days in a row!  Score 1 point Heather.

It helps when we smother an entire meal in mama pea’s mmmm sauce… that stuff seriously made me go mmmm!

Things to dip in mmmm sauce… pesto red potatoes.

White bean pesto, portobello melts…

And of course kale salad.

Why eat kale salad?

Kale is packed with…

  • Vitamin K
  • Vitamin A
  • Vitamin C
  • Manganese
  • Fiber
  • Copper
  • Tryptophan
  • Calcium
  • B6
  • Potassium
  • Folate
  • even omega 3’s!

Plus it’s just dang tasty.

Man Loving Kale Salad

Ingredients

  • 1/2 bunch of kale, de-stemmed and chopped
  • 1 cup sugar snap peas, chopped
  • 2 carrots, grated
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1/4 avocado, mashed
  • pinch of sea salt

Directions

  1. In a large bowl add the kale, peas and carrots.  In a small bowl mix together the tahini, lemon juice, avocado and sea salt to make the dressing. 
  2. Pour the dressing over the kale salad and massage with your hands, covering every leaf.  Allow the salad it sit for a while ‘cooking the kale’ while you make the rest of your meal.  This is best to make first thing.

My next kale salad I’ll make for him… kale, roasted squash and pinto bean salad with creamy tahini lime dressing.

    Kale is one veggie I haven’t fallen head over heels for. I think it’s because it’s so tough compared to other leafy greens. I don’t know…maybe I just need to try it with that sauce! It caught my eye sitting in that Pyrex glass dish 😉

    I love Kale and it’s nutritional benefits so much, I requested my local grocer to carry it. They now do, and I hope it sells well enough for them to keep selling it. It is great to not have to drive 45 minutes for this powerhouse veggie! I love to tear it into small pieces, drizzle with 1T vinegar, 1t oil, and massage (there are much fancier versions of Massaged Kale Salad, but I am lazy). My hubby generally avoids everything green but did put a little in his pasta dish the other day. Eating it raw would be monumental for my hubby. Good for yours!

    I know this is all about the kale….but my eyes went straight to the white bean pesto! Is the recipe posted here?

      Not here, it’s based of Angela’s (oh she glows) high protein pesto recipe… But I changed it so much and didn’t write down my changes that I probably could replicate it. You should try hers!

    I’ve never tried kale!! I’ve read about it so many other blogs and hopefully will take the plunge with next week’s grocery visit! That’s awesome your man is so willing to try everything you’re making. Mine is always so hesitant at first. I need to work on making healthy meals that he’ll like too 🙂

    It’s great how you can get your man to get veggies. I’m still trying to get my boyfriend to eat a whole salad and love it. Pesto red potato sounds delicious!

      Keep trying. Men are like kids… They need to try something many times before they love it…. Just don’t tell my hubs I said that 😉
