Healthy Sausage and Broccoli Breakfast Quiche Recipe
Quiche is one of those meals I can enjoy at any time of the day.
It’s great hot right out of the oven, at room temperature, or even chilled straight from the fridge. Maybe that’s a personal preference, but it works for me!
I love how quiche is super versatile, too. This recipe uses steamed broccoli and chicken sausage (which is an awesome combo btw), but you can absolutely customize it to use what you have on hand!
Once your crust is prepped, just add your fillings, egg mixture, and bake it up!

Hearty breakfast – With a big focus on protein, this quiche will keep you fuller for longer. I love making sure my kids have adequate food in the morning, and this recipe helps with that goal. It’s balanced too! You’ll find protein, fats, carbohydrates, plus veggies! A great way to start the day.
Can be prepped in advance – You can fully make quiche in advance and enjoy it all week long! If you’re feeding a crowd, I highly recommend making 2-3 quiches at one time, because if you have leftovers, they keep well in the fridge and can also be frozen!
Customizable – Don’t get stuck on only trying this broccoli and chicken sausage option; you can customize it in so many ways! Swap your broccoli for other fresh vegetables like mushrooms, baby spinach, bell pepper, red onions, or cauliflower. Be sure to sauté your fresh veggies over medium heat in a large skillet before adding to your quiche crust.

How to make a healthy quiche at home
Step 1: Preheat oven to 375 degrees. Prepare the quiche crust in a 9-inch pie pan (or use a polish pottery pie pan like I used!).
Step 2: In a medium bowl, whisk the milk, eggs, sea salt, and pepper together.
Step 3: Into the unbaked pie shell, add the sausage, broccoli, green onions, and half of the cheddar cheese. Pour the egg mixture over the top, and then add the remaining cheddar cheese and all the parmesan.
Step 4: Bake for 35-45 minutes, or until the filling is set and your crust is golden brown. If your crust is browning too quickly, you can cover the edge of the crust with foil. Allow your baked quiche to cool for 15-20 minutes before slicing into it.

How to store
Once your quiche has cooled to room temperature, you can place slices in an airtight container to be stored in the fridge for up to 5-7 days.
Warm individual pieces in the oven, an air fryer, or enjoy cold or at room temperature!
Freezing quiche is easy! You can freeze an entire quiche once cooled. Wrap it tightly in plastic wrap and place it in a large freezer bag to keep frozen for up to 6 months.
Defrost overnight in the fridge and reheat in a warm oven.

Whole wheat quiche crust – If you prefer not to make a pastry crust at home, feel free to use your favorite store-bought crust. You could also make this a crustless quiche by adding all the filling straight into a pie plate and baking it in there!
Milk – You can use any type of milk from cow’s milk to a dairy-free alternative, or even heavy cream for a decadent milk mixture. Any unflavored and unsweetened option will work!
Chicken sausage – There are many good substitutes for chicken sausage – try turkey sausage, sausage links, Italian sausage, or even our homemade pork sausage mixture. Ham or bacon works too!
Cooked broccoli – I like to use leftover steamed broccoli here, but if you’re working with fresh broccoli, just be sure to steam broccoli before adding to the quiche. If using frozen broccoli, defrost it first. You can swap tons of different vegetables in here, too! Make sure to gently cook the vegetables before adding them because they will not cook much while the quiche bakes.
Green onion – Chives are a lovely substitute for green onions. White, yellow, or red onion will work as well, just make sure to saute those before adding.
Cheeses – We’re using a mixture of cheddar cheese and parmesan cheese here, but you can substitute other cheeses like Monterey Jack cheese or Colby Jack, along with Romano cheese or Asiago cheese.
