Hi Fit Mama Real Food Readers! My name is Lisa and I blog over at Healthy Diaries with my twin sister Maria. I’m pretty new to Heather’s blog, I’ve been following her for about 4-5 months now, but I’m so excited to help this new momma out while she’s spending time cuddling with her little bundle of joy!
Congrats Heather and Jacob!
Just like Heather was, I’m expecting a baby boy, but not until mid August.
I’ve been a very healthy eater for the last couple of years, but once I got pregnant, I took my eating habits to an even higher level to make sure that my baby was getting everything he needed. If there’s one thing that’s really important while pregnant, it’s your protein intake.
My sister Maria happened to come up with a protein muffin recipe a few months ago, and once I tried it I became hooked. We created so many different varieties and I loved that they had 10 grams of protein in them! Normally muffins don’t have that much protein and I loved that whenever I felt like I fell short of my protein intake, I could just make a muffin before bedtime and meet my requirement for the day.
I love that these muffins are so simple to make and filled with such amazing nutrients. Coconut flour, coconut oil & chia seeds. All you need is 5 minutes from start to finish!
My latest favorite protein muffin is the Raspberry Almond version I created.
I don’t know about you, but I cannot get enough of berries this summer and I absolutely love the combination of raspberry and almond together.
Here is the recipe!
Raspberry Almond Protein Muffin
Ingredients
  • 1 egg
  • 1 Tbsp almond milk (any milk will work)
  • 1 Tbsp coconut oil, in melted form (could sub. another light tasting oil, but coconut is SO good for you!)
  • 1/4 tsp almond extract
  • 6 drops liquid stevia (or 1-2 tsp honey or maple syrup)
  • 1 Tbsp chia seeds
  • 1 Tbsp coconut flour
  • 1/8 tsp salt
  • 1/8 tsp baking powder
  • 1/4 cup rasperries (save a few for a topping!)

Instructions

Mix all wet ingredients in a mug. Add chia seeds and let sit for 30 sec-1 min. Add the last 4 ingredients and microwave for 1 min and 15-30 sec.

Flip muffin over onto a small plate and top with a few fresh raspberries and almond slivers (optional). Enjoy!

This muffin turns out so light and fluffy and with the perfect hint of sweetness. I’ve tried making them in the oven before, but they came out much more dense. Not sure why!
