Get ready to feast on these yummy muffins brought to us by Lisa! I’ll be back later today with the final part of Hunter’s birth story. 🙂
- 1 egg
- 1 Tbsp almond milk (any milk will work)
- 1 Tbsp coconut oil, in melted form (could sub. another light tasting oil, but coconut is SO good for you!)
- 1/4 tsp almond extract
- 6 drops liquid stevia (or 1-2 tsp honey or maple syrup)
- 1 Tbsp chia seeds
- 1 Tbsp coconut flour
- 1/8 tsp salt
- 1/8 tsp baking powder
- 1/4 cup rasperries (save a few for a topping!)
Mix all wet ingredients in a mug. Add chia seeds and let sit for 30 sec-1 min. Add the last 4 ingredients and microwave for 1 min and 15-30 sec.
Flip muffin over onto a small plate and top with a few fresh raspberries and almond slivers (optional). Enjoy!
This muffin turns out so light and fluffy and with the perfect hint of sweetness. I’ve tried making them in the oven before, but they came out much more dense. Not sure why!
