Chocolate Hazelnut Almond Pulp Energy Balls

After making my orange almond pulp energy balls, which are SO good, I knew I needed to add another fun flavor.

Today I’m bringing you brownie snack balls that use your leftover almond pulp from making homemade almond milk! Can you go wrong with chocolate? I don’t think so.

We’re combining dates, almond pulp, hazelnut and chocolate all together into one tasty treat. A treat that you can feel good about because it is:

  • naturally sweetened with dates
  • gives you lasting energy from the nuts
  • and doesn’t let you waste the almond pulp from making almond milk!

How to make chocolate hazelnut almond pulp energy balls

  1. To make your chocolate hazelnut energy balls, add the hazelnuts to a food processor and pulse into small bits. Remove and set aside.
  2. Next, add the dates and pulse until broken down into small bits.
  3. Add half the saved hazelnuts, the almond pulp, cocoa powder, almond butter, sea salt and optional mini chocolate chips. Pulse until the mixture is combined.
  4. Lastly, using 1 tbsp of the mixture at a time, roll into balls. Then roll the balls in the remaining saved hazelnut mixture. Makes about 2 dozen balls. Store sealed in the fridge.

Substitution ideas

  • Don’t have hazelnuts around? Try almonds walnuts instead
  • Want a completely naturally sweetened treat? Omit the chocolate chips and use cacao nibs instead
  • Don’t have almond pulp around? Soak 1 cup of almond in water, drain it, and pulse it into a fine crumb before making the mixture
