Tortellini Caprese Skewers Recipe

I love a good easy appetizer and this recipe sure hits the mark!  My kids and I love anything served on a skewer.  It just makes finger foods more fun!

These caprese tortellini appetizers use just a few ingredients, so it’s extra important to choose ingredients that are delicious on their own.

Your tomatoes can make or break this recipe, which is why I was excited to make it using Pure Flavor Juno® Bites Red Grape Tomatoes.

These grape tomatoes have a sweet juicy pop of flavor that’s perfect in every bite!

Since they are greenhouse grown, they’re at peak ripeness all year round, making them the perfect addition to the holiday season.

How to make

  1. Bring a large pot of water to a boil. Add the fresh tortellini in and cook according to package instructions (about 3-4 minutes). When the pasta is done cooking, drain and rinse it with cold water. Add to a bowl and toss with the olive oil to prevent sticking.
  2. To build the tortellini caprese salad skewers, add tomatoes, tortellini pasta, basil leaf, and mozzarella cheese. Mix up the order and have fun building this delicious appetizer using more grape tomatoes, or other items on each skewer.
  3. When all the skewers are prepared, add them to a serving platter. Drizzle with balsamic vinegar if you’d like!

How to store

This simple appetizer can be prepped in advance and stored on a serving tray with plastic wrap.  Prep the skewers ahead of time, but wait to add any balsamic vinegar until right before serving.

To store leftovers, you can leave the skewers built, or remove the tomatoes, tortellini, mozzarella, and basil and add it all into a glass storage container.

Boom, an instant tortellini caprese salad is ready to take on the go!
