We’re continuing on with more high-protein recipes that feature cottage cheese, and these mini cottage cheese pizza bites are one that the whole family can’t stop raving about!

I love that the crust is made with 3 main ingredients – cottage cheese, eggs, and coconut flour. Instead of all-purpose flour or self-rising flour, we’re using coconut flour for extra fiber and fewer carbs. It works so well here and makes a lower-carb option for pizzas!

How to make high-protein pizza crust

Step 1: Preheat the oven to 375 degrees F and line a sheet pan with parchment paper.

Step 2: In a mixing bowl, combine cottage cheese, eggs, coconut flour, sea salt, and garlic. Stir until well combined. Let the dough rest for 5 minutes while the coconut flour absorbs the extra liquid.

Step 3: Scoop the cottage cheese mixture onto the parchment-lined sheet pan, then flatten slightly with the back of a spoon.

Step 4: Bake for 20-25 minutes, until golden brown on the edges.

Step 5: Remove from the oven, spread each bite with a spoonful of sauce/dip, and top with mozzarella and any other toppings you desire.

Step 6: Return to the oven for 5-10 minutes, until the cheese is melty and bubbly, and the pizzas have crispy edges.

Substitutions, optional variations & dietary adjustments

Below you’ll find a list of substitutions that will work well in this high-protein cottage cheese pizza crust recipe.

Cottage cheese – Any cottage cheese works here, although I typically use 2%. Fat-free cottage cheese will work too, and whole milk cottage cheese will add a little extra richness. You can swap in Greek yogurt to make a Greek yogurt dough, too.

Eggs – Eggs are important for structure in this recipe. If you need an egg-free option, this recipe may not hold together as well, but you can experiment with a flax egg (1 tbsp ground flax + 2½ tbsp water per egg), knowing the texture will be softer.

Coconut flour – Coconut flour is very absorbent, so it can’t be swapped 1:1. If needed, try almond flour instead, and use about ½ cup almond flour for a similar consistency. Regular flour or whole wheat flour could be swapped, but similar to almond flour, you’d need to increase the amount by a lot since it does not absorb liquid like coconut flour does.

Granulated garlic – Swap with garlic powder, onion powder, or a mix of Italian seasoning for a classic pizza flavor.

Mozzarella cheese – Shredded mozzarella gives the best melt, but you can also use part-skim mozzarella, provolone, Monterey Jack, a blend of Italian cheeses, or lots of different cheeses.

Pizza sauce/dip – Any simple tomato-based pizza sauce, marinara, or even a thick pasta sauce works well. Choose one with minimal added sugar for the best flavor. You can also use homemade ranch or other creamy dips as the base for your pizzas.
