Fluffy Cottage Cheese Einkorn Pancakes with Spinach

We’re making ultra-bright green pancakes without food dye! The blended spinach makes the pancake mix super green. They are a St. Patrick’s Day staple, but honestly, we make them year-round because they are just that good!

Between the ancient grain einkorn flour, the extra protein from cottage cheese and eggs, and the fun green color from spinach, these pancakes are such a win.

They’re fluffy, nourishing, and feel like a treat – which is exactly what I like for Saturday mornings. Each serving gives you 20 grams of protein and 6 grams of fiber!

Why you’ll love these fenkorn pancakes

Healthier breakfast option – These pancakes are made with nourishing, simple ingredients that make breakfast feel both fun and balanced. The einkorn flour adds a slightly nutty flavor along with more nutritional value compared to modern wheat, while the spinach blends right into the batter for an extra boost of vitamins and minerals. It’s a feel-good breakfast that still tastes like classic fluffy pancakes.

Higher protein – Thanks to 4 eggs and 1 cup of cottage cheese, these pancakes have more protein than your average pancake recipe. That extra protein makes breakfast more satisfying and keeps you fuller for longer – perfect for busy mornings, workouts, or fueling a full day ahead!

Kid-friendly – The bright green color makes these pancakes extra fun for kids, especially around St. Patrick’s Day. The spinach blends completely smooth, so there are no leafy bits, and the pancakes cook up soft, fluffy, and golden brown in the skillet. Stack them high and serve with pure maple syrup, fresh fruit, and country breakfast sausage for a breakfast the whole family will love!

What is einkorn flour?

If you’ve never baked with einkorn before, it’s worth trying.

Einkorn wheat is considered the oldest variety of wheat and is an ancient grain that has been grown for thousands of years. Unlike modern wheat varieties, einkorn has a lower gluten content and a slightly different gluten structure, which some people find easier to digest.

Einkorn also contains:

  • more essential nutrients
  • a higher amount of protein
  • and a naturally rich, nutty flavor

Why these einkorn pancakes are different

Many einkorn pancake recipes are similar to traditional pancakes made with modern wheat flour. This version adds a nutritious twist!

These einkorn pancakes include eggs, cottage cheese, and fresh spinach blended right into the batter. The result is fluffy pancakes that are higher in protein, packed with nutrients, and naturally green – making them especially fun for St. Patrick’s Day or an everyday kid-friendly breakfast.

  • Eggs – Eggs provide structure and help create fluffy pancakes while also adding protein to the batter.
  • Cottage cheese – Cottage cheese adds creaminess and boosts the protein content, making these pancakes more filling than your average pancake recipe.
  • Maple syrup – Adds just the right amount of natural sweetness.
  • Vanilla extract – Vanilla enhances the flavor and makes these pancakes taste extra cozy and delicious.
  • Fresh spinach – The spinach blends right into the batter, giving the pancakes their natural green color while adding extra nutrients. It’s the key ingredient for that amazing color!
  • All-purpose einkorn flour – The star ingredient! Einkorn flour is an ancient grain with a slightly nutty flavor and lower gluten content than modern wheat. It creates tender pancakes with great flavor.
  • baking powder – Helps the pancakes rise and become light and fluffy.
  • Cinnamon – Adds a warm flavor that pairs perfectly with maple syrup.
  • Oil for the skillet – Avocado oil, coconut oil, or olive oil work well for cooking the pancakes on a hot griddle or skillet.

Step 3: Place a large skillet or cast-iron skillet over medium heat and lightly oil it with avocado oil, olive oil, or coconut oil.

Pro tips

A few simple tips will give you the best results every time.

  • Cook over a medium heat pan: Too hot and the outside browns before the inside cooks.
  • Don’t overmix the batter: Mix just until the dry ingredients are incorporated into the wet ingredients.
  • Use a hot griddle or skillet: This helps create that classic golden pancake surface.
  • Let the batter rest for 2–3 minutes: Einkorn flour absorbs liquid a little differently than regular flour.

Fun topping ideas

These pancakes are delicious with all kinds of favorite toppings.

Try them with:

  • Fresh strawberries or blueberries
  • Real maple syrup
  • Greek yogurt
  • Whipped cream
  • Chocolate chips
  • A pat of butter

They also make a great base for a high-protein pancake breakfast when paired with eggs or yogurt.

How to store leftovers

If you have leftover pancakes, they store really well.

  • Refrigerator: Store in an airtight container in the fridge once fully cooled to room temperature for up to 5 days.
  • Freezer: Place cooled pancakes on a baking sheet, then freeze until solid; transfer to a freezer bag.

Reheat in the toaster, a skillet, or the microwave for a quick breakfast.

Substitutions, optional variations & dietary adjustments

Below you’ll find a list of substitutions that will work well in this fluffy pancake recipe.

If you try something different out, please leave a comment below letting us all know how it turned out!

Cottage cheese – If you don’t have cottage cheese, plain Greek yogurt is a great alternative. It will keep the pancakes high in protein and still give the batter a creamy texture.

Einkorn flour – If you don’t have einkorn flour, you can substitute regular all-purpose flour or whole wheat flour. The flavor will be slightly different, but the pancakes will still turn out delicious.

Spinach – Fresh spinach works best, but frozen spinach can also work. Just thaw it first, then squeeze out any excess liquid before blending.

Maple syrup – Honey can be used in place of maple syrup if that’s what you have on hand.

Cinnamon – You can leave the cinnamon out if you prefer or swap it with pumpkin pie spice for a fun flavor variation.
