Easy + Healthy Teriyaki Chicken on a Stick Skewers

Anytime we pick up Thai food, teriyaki chicken sticks with peanut sauce are on my order. If you love them as I do, you’ll be happy to know making them at home is super easy!

It’s actually a pretty fun recipe to make, getting to skewer each chicken strip on the bamboo skewers.

They bake in the oven quickly, and can also be cooked on grill grates! Such a delicious recipe the whole family will love!

What type of teriyaki sauce should you use?

Flavorful homemade teriyaki sauce is always my first choice because often store bought teriyaki sauces are loaded with tons of extra sugar.

My pineapple juice teriyaki sauce is soy free and has no added sugar, plus it’s easy to make!

How to make chicken teriyaki skewers

Step 1: Prepare the chicken by slicing each chicken breast into 1.5-inch or 2-inch strips. You could also use chicken tenders and skip the slicing part.

Step 2: Add the chicken pieces into a large bowl and add the teriyaki sauce. Cover with a lid or plastic wrap. Marinade in the fridge for 1 hour if possible, or overnight. The longer you leave the chicken marinade going, the more flavor it will add.

Step 3: About 30 minutes before you’d like to cook the chicken, place the bamboo skewers in a shallow dish with water. This step is especially important if you choose to grill your chicken.

Step 4: Preheat the oven to 400 degrees F. Prepare the chicken by threading the wood skewer (or metal skewers) through each chicken strip. Place chicken on a rimmed baking. Bake for 6-7 minutes, then flip the chicken skewers, and cook another 3-4 minutes, until the chicken is cooked through.

Step 5: Serve with peanut sauce or soy sauce with loads of sesame seeds and green onions!

What should you serve this with?

How to grill it

This is a great recipe to grill!

You’ll follow the basic steps through step 3 (don’t skip the skewer soak!), but instead of preheating an oven, you’ll want to heat your grill to medium heat.

Cook the chicken for the same length of time as stated in the recipe.

This easy grilling recipe is definitely one you’ll come back to when you want an awesome, healthy protein-packed appetizer!

How to store leftovers

Leftover chicken keeps well in the fridge, making this great for meal prep! You can easily double or triple the recipe to have lots of leftovers waiting for you.

Once the chicken has fully cooled to room temperature, sure in an airtight container or resealable food storage bag for up to 5 days.

Chicken can be reheated on a baking sheet in a warm oven, or even enjoyed cold from the fridge! I love having flavorful protein on hand to add to salads or bump up the protein in my meals.

You can also freeze it! Keep the chicken as strips, or cut it into chicken cubes and then add to a freezer bag. Label and date and freeze for up to 6 months.

Substitutions

Below you’ll find a list of substitutions that will work well in this delicious teriyaki chicken skewers recipe.

Chicken breast – You can easily substitute boneless skinless chicken thighs, sliced steak, or sliced pork.

Teriyaki sauce – While it wouldn’t be teriyaki chicken without teriyaki sauce, I like to give alternative options that would work really well in this recipe. A mixture of coconut aminos with sesame oil, garlic powder, and a touch of brown sugar or coconut sugar would be a great mix. You could also use regular soy sauce, or totally mix it up and use barbecue sauce.
