Fluffy High Protein Cottage Cheese Scrambled Eggs

Cottage cheese is having a major moment, and I am here for it! I’ve never been a fan of cottage cheese on its own, but in cottage cheese pancakescottage cheese ice cream, or whipped cottage cheese toast, I am all about it!

Now that I’ve been adding cottage cheese into my eggs and scrambling them, I’ve found another new way to love this high-protein addition.

The cottage cheese makes your eggs super creamy and gives them the best texture.

Plus, it tastes great and is a simple, affordable addition to regular scrambled eggs.

High protein breakfast – Normally, you’d get 12 grams of protein with a 2-egg scramble, but with the addition of cottage cheese, we bring that total up to 22 grams of protein!

Quick to make – Crack your eggs and add them into your pan with cottage cheese and get scrambling, and you’ll have breakfast ready in minutes! It’s fast to make and 

Versatile addition to breakfast – My favorite way to enjoy these cottage cheese eggs is on toast or a toasted bagel, but they can be used in many different ways! I’m sharing a few ideas a little further down in this post if you are looking for fresh ideas and uses.

What type of cottage cheese to use?

For a creamy texture, I suggest using low-fat cottage cheese (2%) or full-fat cottage cheese.

While you will get more protein from a non-fat cottage cheese, the excess liquid doesn’t leave you with the best texture.

Cottage cheese brands cook differently in this recipe. My favorite brands to use for creamy cottage cheese scrambled eggs are Nancy’s and Darigold, Good Culture.

The final amount of protein will vary slightly based on the brand you use and the fat content in the cottage cheese.

How to make the best scrambled eggs with cottage cheese

Step 1: Heat a nonstick skillet over medium heat and add the oil.

Step 2: Crack the eggs into a bowl, along with the cottage cheese, salt, and pepper. Mix to combine, and then pour the egg mixture into the hot pan.

Step 3: Use a silicone spatula to scramble the eggs, stirring them around as they cook for 4-6 minutes, or until the eggs are no longer runny and have a fluffy texture. Serve with fresh herbs and enjoy!

Serving suggestion

Let these protein-packed eggs be the base for your balanced breakfast. Here are suggestions and easy meal ideas.

For a low carb breakfast: Serve with sautéed bell peppers, spinach, mushrooms, green onions, and cherry tomatoes along with fresh herbs for a filling low-carb breakfast.

To make breakfast burritos: Take your cottage cheesy eggs and add them into a large tortilla along with a slice of cheese, leftover taco meat, and guacamole or salsa.

For delicious avocado toast: Toast your favorite bread or bagel and mash avocado onto it, then top it with your cottage cheese eggs, along with microgreens and a side of fresh berries.

For a super high-protein breakfast: Serve with chicken sausage, a side of turkey bacon, or homemade country breakfast sausage along with a protein smoothie.

How to store

Leftover cottage cheese scrambled eggs should be cooled fully to room temperature and then added to an airtight container. They will stay fresh for up to 4 days. 

You can reheat the eggs in the microwave or on a low temperature on the stovetop. I like to use leftover eggs in breakfast burritos!
