I love finding ways to add more nourishment into my meals and treats, and this healthy ice cream packs in 13 grams of protein per serving! Plus, it’s filled with ingredients you can recognize and is super easy to make.
With traditional ice cream, you need more ingredients and an ice cream machine, but for this blended cottate cheese mixture all you need in a food processor or blender!
Once it’s mixed, add in your flavors of choice (I’m sharing a ton of great combos a little further down), freeze it, and enjoy! Such a good creamy treat you’ll want to repeat all summer long.

How to make creamy ice cream with cottage cheese
Step 1: Into a food processor or blender add the cottage cheese and honey. Blend until smooth.
Step 2: Pour mixture into a loaf pan or round cake pan and stir in the raspebrries and crushed graham crackers. Cover with plastic wrap and place in the freezer for 3-4 hours, until hardened enough to scoop with an ice cream scoop.
Step 3: If it feels too hard to scoop, let it sit at room temperature for 5-10 minutes, then scoop and enjoy!

How to store
For the best texture, enjoy the cottge cheese ice cream 3-4 hours after initially freezing. You can also store it for longer in an airtight container in the freezer.
The ice cream will be pretty hard when initially taken out of the freezer when frozen solid, so leave it on the counter at room temperature for 10-20 minutes before scooping it out.
Letting it come to room temperature will ensure you have a really nice creamy texture!

Full fat cottage cheese – For substitutions, 2% cottage cheese works okay, but it is slightly less creamy. I would not suggest fat-free cottage cheese because it will leave the ice cream more icy than creamy.

Fresh raspberries – You can also use frozen raspberries in place of fresh, or swap in any other berry.
Graham crackers – If you need this recipe to be gluten free, use your favorite gluten free graham cracker. If you don’t have graham crackers available, use any crispy cookie and crush it into small pieces before adding.
