Creamy Cucumber Pineapple Protein Smoothie Recipe
If you’re like me and you love finding more ways to sneak extra vegetables into your smoothies, you’ll love this one! Similar to my mango cucumber smoothie, this one has cucumber and spinach.
I like to use frozen pineapple because it’s nice and sweet, but if you have a ripe pineapple, fresh fruit works, too!
On a hot summer day or after a hard workout, this smoothie is the perfect way to refuel.

How to make this healthy smoothie
Step 1: To a high-speed blender, add the almond milk, spinach, cucumber, pineapple, and protein powder. Blend on high until smooth and creamy.
Step 2: Pour into 2 glasses, or enjoy 1 extra-large serving!

What kind of cucumber should you use?
Look for a fresh cucumber with a thinner skin – English cucumber, Persian cucumbers, and mini cucumbers are all great options.
You can also use regular cucumbers, but I suggest peeling some of the cucumber skin first – this will leave you with a creamier smoothie.

How to store
Have leftover smoothie? Turn it into fruit & veggie protein popsicles!
Pour into silicone popsicle molds, freeze until solid, and enjoy! If you find it hard to get your popsicles out of the mold, run some cold water over the outside to help it to release more easily.
Recipe success tips
If you’re making this green smoothie without a high speed blender, here is how to get your greens fully blended in (no pieces of spinach in your drink!).
Add the milk and spinach and fully blend together. If you see spinach on the sides of your blender, scrape it down.
Once the spinach is fully blended, add the remaining ingredients, finish blending, and enjoy!

Substitutions, optional variations & dietary adjustments

Almond milk – Use your favorite type of plant-based milk here – oat milk, cashew milk, and light coconut milk are great options. You can also swap in coconut water or make it extra fruity by using orange juice. A squeeze of lime juice or lemon juice is a good way to add some extra vitamin C to it as well!
Fresh baby spinach – Frozen spinach works well here, just use a lot less as frozen spinach is more concentrated. You could also use baby kale as a good alternative.
Cucumber – Zucchini is another great green vegetable that is mild and works well in this green drink recipe!
Frozen pineapple – You can also opt to use fresh pineapple. If you do use fresh pineapple, add some ice cubes while blending or frozen ripe banana for even more creaminess. If you don’t have pineapple available, use other tropical fruits.
Vanilla protein powder – Want a non-protein powder alternative? Use flax seeds, hemp hearts, or chia seeds instead and add some healthy fats into this smoothie!

Smoothie is coming out of blender super foamy. Any tips for this?
That can sometimes happen with whey. What type of protein powder are you using? You could blend everything together except the protein and then add that in at the end and blend for 5-10 seconds to combine it. Let me know if that helps!
