Peanut Butter and Jelly Fat Bombs

Grab your 6 ingredients, hurry to the kitchen and make a batch of these naturally sweet peanut butter and jelly fat bombs!  They are the perfect fat fueled snack to keep on hand when you need something to hold you over until your next meal. I also love them as a great energy source for early morning workouts.

What are fat bombs?

Fat bombs are typically small bites of quick energy. Just like energy balls offer up amazing energy but are typically made with dates, fat bombs offer up energy using fat sources.

The fat sources can vary from nut butters to coconut oil, but are usually low in sugar and carbohydrates. Because they are lower in carbs they make a great keto snack!

While I don’t follow a keto regiment, I do love to be fat fueled because it helps balance blood sugar.

Are fat bombs healthy?

I see fat as an important part of a balanced diet. I don’t avoid it, but everyone will have their own definition of what is healthy. In our fat bombs today we use natural peanut butter and coconut oil, which I am all for!

When I choose a snack blood sugar balance is often the prime consideration I think of, and fat is always a must in that situation. It helps to curb hunger pangs.

Fat bombs have been my go-to pre-workout snack lately. Some mornings have me out the door really early to teach yoga. On those mornings, the last thing I want to do it cook a full breakfast.

Peanut butter and jelly fat bombs give me lasting energy and keep hunger away! Isn’t it the worst when you’re mid workout and just thinking about food? I’ve been there. These fat bombs help give me sustainable energy.

How to store fat bombs

The best place to store fat bombs are in the fridge or the freezer. They will last for 7 days in the fridge, but up to 3 months in the freezer. They defrost quickly from the freezer, and are even delicious when eaten frozen!

Because of the coconut oil and peanut butter mixture, if you don’t keep them chilled they will soften and eventually melt.

How to make fat bombs

  1. Star by melting the coconut oil and then whisking in the peanut butter, maple syrup, vanilla extract and sea salt.
  2. Pour half the peanut butter mixture into 6 silicone muffin tins.  Chill in the fridge for 15 minutes.
  3. After 15 minutes add 1 tsp jam onto the center of each peanut butter cup. Spoon remaining peanut butter mixture over the 6 peanut butter and jelly fat bombs.
  4. Chill in the fridge for 20 more minutes, or until fully set.

Instructions

  • In a small bowl melt your coconut oil in the microwave (or stovetop).  Whisk in the peanut butter, maple syrup, vanilla extract and sea salt.
  • Pour half the peanut butter mixture into 6 silicone muffin tins.  Chill in the fridge for 15 minutes.
