- Prepare the veggies by slicing the bell peppers and onions into thin strips.
- In a large skillet over medium-high heat, add the oil, sliced bell peppers and onion, along with the fajita seasoning blend. Cook the fajita veggies until the onions have softened and have some browning on them, and the peppers are beginning to soften, but still maintain their shape – about 8-10 minutes.

Avocado oil – Olive oil, or any neutral oil will work in place of the avocado oil. A refined coconut oil or ghee works great here too!
Sweet bell peppers – Geen bell peppers, yellow bell peppers, red peppers, orange peppers – really any color of bell peppers works in this recipe! Green bell peppers are a classic, but flavor wise all variety of colors will work. Want to kick up the heat? Add in a few sliced jalapenos.
Yellow onion – White onions, red onion, and shallots will all work in place of yellow onion.
Homemade fajita seasoning – Feel free to swap in a store-bought seasoning here. You can also replace the seasoning mix with chili powder, cumin, garlic powder, sea salt, black pepper, and cayenne pepper.
