A good brownie is something that puts a smile on my face.
For some reason I haven’t been baking as much as I used to. When I lived at my parents house I baked all.the.time. Maybe it was because supplies were provided by my parents (I wasn’t paying for groceries) or maybe it was because I had a lot more free time. But when I get around to baking now I still get that calming, enjoyable feeling. Baking is like therapy that gives you something tasty at the end.
This time I had plans to incorporate a few of the products I received from Navitas Naturals.
Here’s what was sent to me…
- Palm sugar
- Trail mix (3 berries, cacao nibs and cashews)
- Cacao nibs
- Mulberries
- Maqui powder (maqui is a berry)
- Sprouted omega blend (chia seed, brown rice and flaxseed – LOVE have been adding to smoothies + oats)
Originally I planned to make my almond butter and pomegranate brownies but instead of almond butter add in PB, then instead of pomegranates add in walnuts + gogi berries. Plans changed when I wanted to try out these products.
I was super happy the palm sugar was sent to me because I actually ran out of natural cane sugar the day before, so that got subbed in.
The cacao nibs were both in the trail mix inside the brownie + on top of the brownie. It added nice texture + sweetness.
This trail mix isn’t like any trail mix I’ve tried before. It’s filled with cacao nibs (love), cashews, gogi berries, mulberries and goldenberries.
I would say, next time I’d pick out the goldenberries for the brownie mix. They were tasty on top of my pb-banana overnight oats, but I wasn’t a big fan of how they cooked up. All the other ingredients in there were great though.
Are you ready to make some super food brownies?!
Peanut Butter Trail Mix Brownies
Adapted from my pomegranate and almond butter deep dark chocolate browniesIngredients
- 1 egg
- ⅔ cup palm sugar (can sub in natural cane sugar)
- ¼ cup peanut butter
- 2 tbsp canola oil
- ½ cup dutched cocoa powder
- ⅔ cup whole wheat pastry flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ⅛ tsp sea salt
- ⅓ cup superfood power mix (trail mix)
- 1 tbsp cacao nibs
- 1-2 tbsp water
Directions
- Pre-heat your oven to 375 degrees. Coat an 8 x 8 glass dish with olive oil spray.
- In a mixing bowl, or bowl with a hand mixer combine the egg, sugar, peanut butter and oil. Mix for 3-4 minutes until well combined.
- In another bowl combine the cocoa powder, flour, baking soda, baking powder and salt. Pour into the wet ingredients and mix until combined. Add in 1-2 tbsp water if necessary. Stir in the trail mix.
- Press the brownie mixture into the dish. The mixture will be very, very thick. Press the cacao nibs into the top of the brownie. Bake for 17-20 minutes, or until a toothpick comes out clean. Allow to cool before slicing.
Oh so chocolaty and good. I have a feeling I may *test* out a crumbled brownie on overnight oats… to make sure it’s okay.

I made Chocolate Chip Banana Brownies from Daily Garnish last week – they were soo good! I ate them crumbled over PB banana soft serve 🙂
Mmmm that sounds amazing.
I love brownies with big chunks of chocolate in them!

What a cool brownie! I bet it has awesome texture from the add ins!My favorite brownie ? I love blondies!!
Yup tons of texture. I always forget about blondies… I don’t know if I’ve even had any before.
Wow, that brownie looks really good! It’s so interesting to see how everyone else makes up their own recipes using random things around the house. Very creative!
It’s a great use of what’s already in the house!
I am definitely bookmarking this! Actually you should check out my recipe that I posted not in my last entry, but the entry before that. It’s the Himalayan Zucchini Bread recipe and I have a feeling that you will love it! Let me know what you think of it 🙂 Thanks for sharing this with us!

Pumpkin + chocolate is always a good idea.

Great recipe I’ve never had brownies with trail mix in them! I usually just have plain chocolate brownies. Nice toppings on your overnight oats 🙂
I hadn’t either.. until now 😉
I made Oreo cheesecake brownies this weekend. They kind of blew my mind!
These look outrageous—and I would totally convince myself that they’re healthy because they’re filled with superfoods. Acceptable, right?

My favorite brownie is the mint choc brownie my mommy makes me every Christmas holiday season. It is my special treat when I go home, and it makes the holidays perfect.
I follow you on facebook and emails.
Now those are some brownies!! I’m not really a bit brownie fan but when I was a kid, my mom would make them with a cream cheese icing. Yum.
I added your blog to my google reader.
That brownie looks a lot healthier than what my favorite brownie is 🙂 I like cake like brownies that are dense, but still have a lot of moistness to them.
My favorite brownies are made by my friend Mary Katherine. They contain way too much butter and not a lot of flour and a whole bag of chocolate chips. They closely resemble batter. She usually makes them for me every Dec and I cheat like crazy and gobble them up!
I also liked your Facebook page 🙂

P.S. I love that you put trail mix in the brownies. They look so lovingly filled with texture and oh so chocolately!
I’m not a big brownie person now, but my favorite are definitely the dark chocolate brownies with mint frosting and chocolate drizzle that my Mom used to make all the time – they always went fast in our house!
